I try to eat low carb in the evening and truth be told it’s because I feel a lot less bloated the next morning compared to when I have a carb filled meal. This recipe has lots of flavor and a nice light crunch. What we love most about this recipe is that it’s incredibly easy to make and takes no time at all. - 10-12 chicken tenders
- 2 cups unsweetened coconut shreds
- 2/3 cup almond flour
- 1 tsp garlic salt
- 1/2 tsp paprika
- 1/2 tsp pepper
- 1/4 olive oil to brown the chicken
How To Make
Preheat oven to 400° Spray your large cookie sheet with cooking spray or use parchment paper. Next beat your eggs in a medium bowl, set aside. Next mix the coconut, almond flour, garlic salt, pepper, and paprika in a medium bowl. Now you want to take your chicken tenders and dip them into the egg mixture and then into the coconut mixture covering very well. Next you want to brown your chickening olive oil until golden brown for approximately five minutes. Now place your chicken tenders on your baking sheet and bake approximately 15 to 20 minutes until your chicken is done. Serve with your favorite dipping sauce …in this dish we used Daiya Dairy Free Ranch dressing, yum!!
