I love Bean and Bacon Soup! I remember as a little girl running to the grocery bags to see if my mom had purchased my favorite Campbells Bean and Bacon soup. It was always such a treat! So tonight I thought I would make a healthy spin off of the Traditional All-American favorite bowl of warmth and goodness. I love adding veggies to my soups it seems so improper otherwise. Isn’t that the point of soups? I know soup to me has always been something I eat to boost my immunity. At least thats how I grew up thinking. My mom was an avid soup maker. I always remember her adding all the veggies and healthy grains she could to make sure she hit the mark of nutrition. So with my role model mom in mind I try to lead by example with my kids. I don’t always do it perfectly ‘sigh’ … but I try! Thats what counts right? Anyways lately Ive been in Kale beast mode adding it to everything, and this soup was no exception! Kale is such a nutritional powerhouse , lowering things like cholesterol, cancer and the numerous different flavanoids that combine both antioxidant and anti~inflammatory benefits.
