- 2 tbsp. olive oil
- 1 small diced yellow onion
- 3 cloves garlic minced
- 1/3 cup diced red bell pepper ( = approx. 1/2 of a red bell pepper )
- 1 small jalapeno chopped ( 3 tbsp. )
- 1– 8oz. can tomato sauce
- 1 cup gluten-free chicken broth
- 1/2 tsp. cumin
- 1/4 tsp. chili powder
- 1/4 tsp. Tajin seasoning ( optional )
- 1/2 tsp. garlic salt ( or regular salt )
- 1 cup long-grain white rice
- fresh squeezed lime for garnish
- cilantro for garnish
- additional salt and pepper to taste
Instructions
- Rinse rice in a fine-mesh sieve under cold water and set aside.
- In a large saute pan heat 2 tablespoons of olive oil over med-high heat.
- Add onions, garlic, red bell pepper, and jalapeno. Saute 2 to 3 minutes until onion is translucent.
- Next add in the rice and saute until golden brown. This takes about 2 to 3 minutes.
- Gently pour in tomato sauce and chicken broth then stir together. Now add in seasonings and stir again until thoroughly incorporated.
- Bring to a boil. Once boiling turn down the heat to a low simmer and cover. Cook for 15 minutes, remove from heat and fluff the rice with a fork.
- Season with additional salt and pepper to taste. Garnish with fresh squeezed lime and cilantro.
