Description

A delicious easy to make NO CHILL cut out sugar cookie recipe that’s gluten-free and dairy-free. These are the perfect sugar cookie recipe to decorate for Valentine’s Day or any Holiday. The perfect bit of chewy and soft baked.❤️


Ingredients

Scale
  • 3 cups Bobs Red Mill Gluten Free 1 to 1 Flour
  • 1 1/4 cup sugar
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder
  • 1/8 tsp. baking soda
  • 1 1/2 stick Earth Balance Butter= ( 3/4 cup ) partially softened… see notes above
  • 1 cage free egg
  • 1/4 tsp. apple cider vinegar
  • 1/2 tsp. almond extract
  • 1 tsp. vanilla extract
  • 1 1/2 tablespoon coconut oil
  • 1 ( 9 oz. ) bag Enjoy Life Chocolate Chips for dairy free ( Nestle Toll House for non dairy free )
  • Valentine candy sprinkles for decorating

Instructions

  1. Preheat oven to 350°
  2. Line a baking sheet with parchment paper and set aside. 
  3. Place your rolling pin in the freezer while preparing your cookie dough.
  4. In a large bowl add flour, salt, baking powder, and baking soda. Mix together and then set aside.
  5. In a small bowl add your cold butter. Microwave for 20 seconds, it needs to be partially softened but not completely melted.
  6. Transfer your slightly softened butter to a large glass bowl.
  7. Add your sugar and cream together.
  8. Next add in your vanilla extract, almond extract, apple cider vinegar, and egg. Mix until fully combined.
  9. Now slowly add your flour into your wet ingredients and mix well.
  10. Form dough into a ball and place on a big piece of parchment paper. Place another big piece of parchment paper over the top of the dough. ( Use one hand to hold parchment paper in place and the other to roll the dough. )
  11. Now using your chilled rolling pin, Roll out your dough into a thin disc. ( Approx. 1/4 inch thick )
  12. Remove the top piece of parchment paper.
  13. Use cookie cutters to cut out heart shapes, then transfer to your lined baking sheet.
  14. Bake for 6 to 7 minutes.
  15. Remove cookies from the oven once you see the edges of the cookies starting to brown.
  16. Let cool.
  17. While cookies are cooling pour dark chocolate chips in a medium bowl add 1 1/2 tablespoons of coconut oil. Melt in the microwave for 20 second intervals stirring between each interval until chocolate chips are completely melted.
  18. Once cookies are cooled dip half of each side of the heart cookie into the chocolate, lay on parchment paper and sprinkle with valentine candy sprinkles.
  19. Let sit until chocolate hardens, then enjoy! 🙂
