Easy No Chill Chocolate Dipped Sugar Cookies
The heart wants what the heart wants, and you know your heart wants these Easy No Chill Chocolate Dipped Sugar Cookies! Cupid ain’t got nothing on these sweet babies. Sugar cookies are always a fun idea for Valentine’s. Who says they only have to be for Christmas? There are so many festivities and holidays you can make with these gluten-free no chill sugar cookies. Hey Easters coming up next! I have some wonderful memories of my childhood making sugar cookies with my mom in the kitchen around the holidays. There’s just something about the process that brings back the comforts of home.
These Valentine’s dipped sugar cookies are sure to melt your valentine’s heart. With a chewy soft baked texture and dipped in dark chocolate, no doubts these cookies are sure to win your loved ones over.
Dairy-Free Ingredients For Chocolate Dipped Sugar Cookie Recipe:
We used Earth Balance butter for these gluten-free cut out sugar cookies. Earth Balance is Dairy-Free, and another reason these easy gluten-free sugar cookies make a great option for those living with food allergies. Recipe Tips For Chocolate Dipped Sugar Cookies:
- When measuring your flour make sure your not scooping directly from the bag. This can cause inaccurate measurements and your recipe may not turn out. Use a spoon to scoop the flour from the bag to the measuring cup and level it off with the back end of a knife.
- Make sure you freeze your rolling pin before rolling out your dough. This is a MUST.
- Make sure you do not melt your butter all the way… it needs to be half way softened in the microwave… approximately 20 to 25 seconds in the microwave ( keep a close eye on it… some microwaves are stronger heat than others. )
- Roll out your dough in smaller batches it makes it A LOT easier.
- I rolled my dough out between two pieces of parchment paper ( using one hand to hold the paper in place and the other hand to roll ). If this seems too complicated then just set the dough out on one piece of parchment paper. Sprinkle a little flour on top of the dough then roll it out.
Ingredients You Will Need For Chocolate Dipped Sugar Cookies:
- 3 cups Bobs Red Mill Gluten Free 1 to 1 Flour
- 1 1/4 cup sugar
- 1/2 tsp. salt
- 1 1/2 tsp. baking powder
- 1/8 tsp. baking soda
- 1 1/2 stick Earth Balance Butter= ( 3/4 cup ) needs to be partially softened. read notes above.
- 1 cage free egg
- 1/4 tsp. apple cider vinegar
- 1/2 tsp. almond extract
- 1 tsp. vanilla extract
- 1 1/2 tablespoon coconut oil
- 1 ( 10 oz. ) bag Nestle Toll House Dark Chocolate Morsels
- Valentine gluten free candy sprinkles for decorating ( I can tolerate Wiltons candy sprinkles however if you have celiac you may want to know they are made in a facility that processes wheat. ) Here is a link to gluten free valentine sprinkles that I also like Betty Crocker Heart Sprinkles
*If your celiac or sensitive to gluten/wheat, always check your sprinkle ingredients.*
How To Make Easy No Chill Chocolate Dipped Sugar Cookies:
- Preheat oven to 350°
- Line a baking sheet with parchment paper and set aside.
- Place your rolling pin in the freezer while preparing your cookie dough.
- In a large bowl add flour, salt, baking powder, and baking soda. Mix together and then set aside.
- In a small bowl add your cold butter. Microwave for 20 seconds, NO LONGER. Do NOT melt butter!
- Transfer your slightly softened butter to a large glass bowl.
- Add your sugar and cream together.
- Next add in your vanilla extract, almond extract, apple cider vinegar, and egg. Mix until fully combined.
- Now slowly add your flour into your wet ingredients and mix well.
- Form dough into a ball and place on a big piece of parchment paper. Place another big piece of parchment paper over the top of the dough. ( Use one hand to hold parchment paper in place and the other to roll the dough. )
- Now using your chilled rolling pin, Roll out your dough into a thin disc. ( Approx. 1/4 inch thick )
- Remove the top piece of parchment paper.
- Use cookie cutters to cut out heart shapes, then transfer to your lined baking sheet.
- Bake for approximately 6 to 7 minutes.
- Remove cookies from the oven once you see the edges of the cookies starting to brown.
- Let cool.
- While cookies are cooling pour dark chocolate chips in a medium bowl add 1 1/2 tablespoons of coconut oil. Melt in the microwave for 20 second intervals stirring between each interval until chocolate chips are completely melted.
- Once cookies are cooled dip half of each side of the heart cookie into the chocolate, lay on parchment paper and sprinkle with valentine candy sprinkles.Let sit until chocolate hardens, then enjoy! 🙂
