Description
Pumpkin Spice Donuts are a easy one bowl recipe. Incredibly moist , fluffy, and coated in a warm cinnamon and sugar layer. The perfect fall breakfast, brunch, or dessert!

- 1 – 1/2 cups Namaste Foods Spice Cake Mix ( *you will not be using the whole box- make sure to measure )
- 1/2 teaspoon pumpkin pie spice
- 1/2 tsp. vanilla extract
- 1/2 cup organic canned pumpkin puree ( not canned pumpkin pie mix )
- 1/4 cup grapeseed oil
- 2 eggs ( room temperature )
Cinnamon and Sugar Coating
- 1/2 cup sugar
- 1/2 tsp. cinnamon
- 3 tablespoons melted Earth Balance Butter
Instructions
- Preheat oven to 350 degrees.
- Grease donut pan and set aside.
- In a large bowl add spice cake mix, pumpkin pie spice, vanilla, canned pumpkin puree, oil, and eggs.
- Mix with a spatula until batter is thoroughly combined and smooth.
- Pipe batter into donut cavities ( or use a large cookie scoop to scoop batter into donut cavities ).
- Place in the oven and bake for 10 to 12 minutes. ( Mine were done in 10 minutes. Don’t over bake- the donuts will become rubbery…. oven temps may vary – keep an eye and check with a toothpick )
- Let cool completely before coating in cinnamon and sugar layer.
Cinnamon and Sugar Coating
- In a small bowl mix sugar and cinnamon – set aside.
- In a small dish melt butter.
- Once donuts have completely cooled, lightly brush each donut with melted butter and roll into cinnamon and sugar mixture.
