Incredibly delicious Gluten Free Chocolate Zucchini Muffins. Topped with Candied Pistachios. Enjoy with a friend over a fresh brewed cup of coffee.
Ingredients
Gluten Free Zucchini Muffins
- 1 box Namaste Foods Gluten Free No Sugar Added Muffin Mix
- 1/4 cup Grapeseed Oil
- 2 Cage Free Eggs
- 1 cup water
- 1/4 cup hazelnut milk ( unsweetened ) or cashew milk
- 3/4 cup cocoa powder
- 1 1/4 cup turbinado sugar
- 1 cup Enjoy Life Chocolate chips
- 1/2 cup shredded zucchini pat dry in a paper towel
Gluten Free Zucchini Muffins Topping
- 1 cup raw pistachio pieces
- 2 tbsp turbinado sugar or brown sugar
- 3 tsp water
- 1/2 cup Enjoy Life Chocolate chips
Instructions
Gluten Free Zucchini Muffins

Preheat oven to 400°.

Grease your muffin tin or line with cupcake liners.

Beat together your eggs, oil, water, milk, cake mix, cocoa powder, and sugar.

Now carefully fold in your chocolate chips and shredded zucchini.

Fill your muffin tins 2/3 from the top and bake approximately 13 to 15 minutes. Let cool.

While muffins are cooling… In a small bowl mix together your 2 tablespoons of water and 2 tablespoons of sugar. Mix in your pistachio pieces.

Now lay your pistachio pieces on a baking sheet and bake for 10 minutes at 300°. Keep an eye. oven temperatures vary.

While those are baking melt your remaining chocolate chips and spoon on to muffins… then top it off with your candied pistachio pieces.
