Description
This Grain-Free Maple Banana Bread is super healthy, filled with delicious banana and maple flavor, and so easy to make. A wonderful breakfast or snack option.

- 2–1/2 cups almond flour
- 1/3 cup tapioca starch
- 1– 1/2 tsp. Hain Baking Powder
- 1/2 tsp. cinnamon
- 1 egg ( preferably room temp )
- 1 egg yolk ( preferably room temp )
- 1 tsp. vanilla extract
- 1/4 cup melted Earth Balance Butter
- 1/2 cup pure maple syrup
- 2 medium mashed overripe bananas
Topping
- 1/2 cup crushed walnuts
Instructions
- Preheat oven to 350 degrees and line a 9×5 bread pan with parchment paper.
- In a medium bowl combine flour, starch, baking powder, and cinnamon.
- In a large bowl mix together egg, yolk, maple syrup, and vanilla. Then add in melted butter and mix again.
- Gently mix dry ingredients into wet ingredients then fold in the mashed bananas. Mix until just combined.
- Pour batter into lined loaf pan , top with crushed walnuts and bake for approximately 50 to 55 minutes. Oven temperatures may vary so check with a toothpick.
