Grain-Free Maple Banana Bread

This Grain-Free Maple Banana Bread is super healthy, filled with delicious banana and maple flavor, and so easy to make. A wonderful breakfast or snack option.


  • 21/2 cups almond flour
  • 1/3 cup tapioca starch
  • 11/2 tsp. Hain Baking Powder
  • 1/2 tsp. cinnamon
  • 1 egg ( preferably room temp )
  • 1 egg yolk ( preferably room temp )
  • 1 tsp. vanilla extract
  • 1/4 cup melted Earth Balance Butter
  • 1/2 cup pure maple syrup
  • 2 medium mashed overripe bananas


  • 1/2 cup crushed walnuts


  1. Preheat oven to 350 degrees and line a 9×5 bread pan with parchment paper.
  2. In a medium bowl combine flour, starch, baking powder, and cinnamon.
  3. In a large bowl mix together egg, yolk, maple syrup, and vanilla. Then add in melted butter and mix again.
  4. Gently mix dry ingredients into wet ingredients then fold in the mashed bananas. Mix until just combined.
  5. Pour batter into lined loaf pan , top with crushed walnuts and bake for approximately 50 to 55 minutes. Oven temperatures may vary so check with a toothpick.
  6. Let cool and then enjoy!
