It’s banana time! We are putting those overripe bananas to good use with this delicious Grain-Free Maple Banana Bread. The holiday baking countdown has begun and banana bread is always a wonderful addition to the baking list.

This maple banana bread is made with healthy ingredients. It has everythingĀ  you’re looking for in a banana bread without the guilt. An easy to make recipe that’s super moist and topped with a crunchy walnut topping. Filled with the delicious sweetness of overripe bananas and naturally sweetened pure maple syrup. Makes for a great breakfast and snack too. Comfort for the soul not just the appetite!

  • cinnamon

  • vanilla extract
  • Earth Balance Butter
  • pure maple syrup

Description

This Grain-Free Maple Banana Bread is super healthy, filled with delicious banana and maple flavor, and so easy to make. A wonderful breakfast or snack option.


Ingredients

Scale
  • 2–1/2 cups almond flour
  • 1/3 cup tapioca starch
  • 1– 1/2 tsp. Hain Baking Powder
  • 1/2 tsp. cinnamon
  • 1 egg ( preferably room temp )
  • 1 egg yolk ( preferably room temp )
  • 1 tsp. vanilla extract
  • 1/4 cup melted Earth Balance Butter
  • 1/2 cup pure maple syrup
  • 2 medium mashed overripe bananas

Topping

  • 1/2 cup crushed walnuts

Instructions

  1. Preheat oven to 350 degrees and line a 9×5 bread pan with parchment paper.
  2. In a medium bowl combine flour, starch, baking powder, and cinnamon.
  3. In a large bowl mix together egg, yolk, maple syrup, and vanilla. Then add in melted butter and mix again.
  4. Gently mix dry ingredients into wet ingredients then fold in the mashed bananas. Mix until just combined.
  5. Pour batter into lined loaf pan , top with crushed walnuts and bake for approximately 50 to 55 minutes. Oven temperatures may vary so check with a toothpick.
  6. Let cool and then enjoy!
