Gluten Free Lemon Poppyseed Cookies with Earl Grey Glaze

I’m so excited to bring you this delicious Gluten Free Lemon Poppyseed Cookies With Earl Grey Glaze recipe. Believe it or not this recipe started as a lemon poppyseed loaf which then transpired into making these yummy beauties.  If you’ve been following my blog for awhile you know I have a deep admiration for lemon treats. One of the most popular summer treats on my blog are these  Gluten Free Mini Vanilla Lemon Huckleberry Bundt Cakes  , so I’m pretty sure I have some lemon fans here as well! The Earl Grey glaze gives it a nice light citrusy flavor making it a perfect match, compliments of the bergamot. I should name these cookies ” Love At First Bite Lemon Poppyseed Cookies ” because the truth of the matter is they are that scrumptious.  These amazing cookies are chewy, slightly dense, and soft with a matchless… sweet … lemon tart … zesty edge!!

I used Namaste Foods Gluten Free Perfect Flour Blend for this recipe. The wonderful thing I love about Namaste Foods is that their flours and mixes are free from top allergens. They don’t sacrifice on taste and it’s a great option for those of you that have serious food sensitivities and allergies. When using this flour make sure to gently and slowly mix it into your wet ingredients, it gets thick fast. Ingredients

Scale

The Cookies

  • 1 1/2 cups Namaste Foods Perfect Flour Blend its gluten free
  • 1/8 tsp baking soda
  • 1 egg { room temperature }
  • 1 stick melted unsalted butter or earth balance
  • 3/4 cup Sugar
  • 1 tsp Honey
  • 3 tbsp Fresh squeezed Lemon Juice
  • 2 tbsp lemon zest
  • 1 1/2 tbsp poppyseeds

Earl Grey Glaze

  • 1 1/2 cups powdered sugar
  • 2 tbsp butter { room temperature } or earth balance
  • 1 1/2 tsp earl grey tea
  • 1 tbsp fresh lemon juice
  • 3 tsp dairy free milk

Instructions

  1. Mix flour and baking soda in medium bowl then set aside.
  2. In a large bowl mix egg, butter, sugar, lemon juice, and honey on medium high speed for 2 minutes.
  3. Now stir in poppyseeds, lemon juice, and lemon zest.
  4. With a spatula gently and slowly stir your flour mix into your wet mixture until combined. ( don’t over mix ) Cover and refrigerate for no longer than one hour.
  5. Preheat oven to 325° approximately 15 minutes before you pull the cookies out of the refrigerator
  6. Line a cookie sheet with parchment paper.
  7. Using a cookie scoop, scoop the dough and form into a ball in your hands. Slightly/gently press the top of the cookies down with the palm of your hand to flatten the top of the cookie a bit.
  8. Bake cookies for approximately 13 minutes
  9. Let cool
  10. While cooling, steep four bags of Earl Grey Tea in a half cup of water for 10 minutes.
  11. Once done steeping, Remove teabags squeezing any extra liquid out of each one.
  12. Now make your icing. In a medium bowl, mix your butter, milk, fresh lemon juice, and your 1 1/2 teaspoon fresh brewed earl grey tea. Gently mix in your powdered sugar, scrape down sides of bowl with spatula until all ingredients are smooth and combined.
  13. Now that your cookies are cooled, frost each cookie top with the icing. Sprinkle a dash of fresh grated lemon zest on each cookie. Enjoy 🙂

Notes

When using Namaste Foods Perfect Flour Blend make sure to gently and slowly mix it into your wet ingredients, it gets thick fast.
