When I first started experimenting with Galettes I was surprised with how incredibly similar it is to making a pie. So simple and straightforward, basically a galette is a french term for a flat round cake or tart using pastry dough and folding the edge of the dough over a fruit or savory filling.
Our Gluten Free Peach Galette has a tender flaky grain-free crust, filled with a delicious juicy sweet peach filling, and topped with crushed sliced almonds. Best of all, it’s made without any refined sugars and uses coconut sugar instead of white sugar for a delicate sweet touch.
The perfect healthy summer dessert made for those sunny daaazzzee!
Tips To Make Gluten Free Peach Galette
- I have found the best type of peach for peach galette is yellow peaches. They have a really nice sweet yet tangy flavor and a thickset flesh.
- The peach skin will soften during baking so you do not need to peel the peaches.
- Slice peaches about a quarter of an inch.
- You want peaches to be ripe but not overly ripe.

Description
Gluten Free Peach Galette is made with a tender flaky grain-free crust and filled with a juicy sweet peachy filling. Maximize those summer peaches with this healthy peach galette!
Ingredients
Crust
- 2 cups Almond Flour
- 3/4 cup Tapioca Starch
- 1/4 tsp. Hain Baking Powder
- 2 tbsp. Coconut Sugar
- 6 tbsp. Earth Balance Butter ( cut into small cubes )
- 1 tbsp. Dairy Free Sour Cream
- 1 Egg beaten
- Egg Wash ( 1 egg yolk + 1 tsp. water beaten together in a small bow )
Peach Filling
- 1 pound Sliced Peaches- not overly ripe ( weighed on kitchen scale )
- 1/3 cup Coconut Sugar
- 1 tbsp. Tapioca Starch
- 1/2 tsp. Cinnamon
- 1 tsp. Vanilla Extract
- 1 tsp. Lemon Juice
Topping
- sliced almonds ( crushed up )
Instructions
Crust
- In a large bowl add and mix together almond flour, tapioca starch, baking powder, and coconut sugar.
- Add butter cubes. Cut butter into the flour until butter is evenly distributed and the size of a pea.
- Make a well in the center of the flour mixture and add 1 beaten egg and sour cream. Mix with a fork until a thick dough forms.
- Shape dough into a disc, wrap and refrigerate for 1 hour.
How to assemble
- Preheat oven to 425 degrees.
- Next remove dough from fridge. Place disc between two pieces of parchment or wax paper and roll out dough to about 12 inches across. Remove top layer of paper and flip dough over onto a baking sheet lined with parchment paper. Place dough back into the refrigerator while making the peach filling.
- In a medium bowl add sliced peaches, coconut sugar, tapioca starch, cinnamon, vanilla extract, and lemon juice. Mix until thoroughly incorporated.
- Arrange sliced peaches in a circular pattern on the dough. Leaving about a 2 inch border around the edge.
- Fold the edge of the pastry dough over the peaches.
- Brush the edge of the pastry with the egg wash and top with crushed almond slices.
- Bake in the oven at 425 degrees for 12 minutes. Then turn the heat down to 400 degrees and continue baking for another 13 minutes.
- Remove from the oven and let cool.
- While cooling brush peaches with a little melted butter.
- Top with a scoop of ice cream and enjoy!
