It’s been a long couple weeks catching up on blog work and backend blog stuff that I’m a little behind on posting. However I’m super excited to have my new logo up and some color changes done on the blog. I want to thank you all for the support and love over the years. I started doing this in March 2015 and in Decemeber 2015 I launched my website. There’s been some times where I have been MIA but you continue to support and subscribe to my blog. So thank you for believing in me.

I’m definitely not the same person I was when I started this blog. I’ve pushed through to a whole new level. I have grown through a lot of fear, worry, and opposition and I will always be growing. It’s not easy putting yourself out there the way I do with my faith. It comes at a high price, but in the end it’s worth it.

God has strengthened my inner man in ways I never thought possible. What used to cripple me and hold me back no longer carries any weight. I’ve had a lot of not so nice comments ( and even more nicer ones ) about my faith in social media messages and comments on my blog, I’ve had jealous people, hostility, and I’ve been blocked and shunned. It use to consume me and set me back for weeks. I didn’t know how to push through it.

BUT God.

He uses these challenges for good… to grow us up, to rely on him, to show us what it’s like to persevere, overcome, and not give up. God has shown me what matters and what doesn’t. Things I used to worry about just don’t matter. He’s shown me how to be business minded. I now think ” business” not ” personal” . I have to spend time with God daily. It’s my saving grace. If I’m not in the word and prayer I’m not growing. If I’m not growing then I’m stagnant, or worse I’m backsliding. There’s no way I can do life without God I would be lost and broken without him. He’s refining me like gold and silver. It’s not always fun, but I’m coming out one strong, courageous God fearing woman!! 

“Therefore, since we are surrounded by such a great cloud of witnesses, let us throw off everything that hinders and the sin that so easily entangles. And let us run with perseverance the race marked out for us, fixing our eyes on Jesus, the pioneer and perfecter of faith. For the joy set before him he endured the cross, scorning its shame, and sat down at the right hand of the throne of God. Consider him who endured such opposition from sinners, so that you will not grow weary and lose heart.”

Gluten – Free Cinnamon Spice Bars With Sweet Ginger Icing 

If at first you don’t succeed dust yourself off and try again. That’s what I kept telling myself last week when trying to photograph these little scrumptious delights. I had to take 3 different days and remake these bars every single time. But the good news is I got it! These bars are so delicious, I wanted my pictures to do them justice. As you can see here they are the perfect balance of moist and chewy. Not only are these bars gluten – free but dairy free as well. We used Namaste Foods Perfect Flour Blend. Namaste Foods is great because their flours are free from the Top 8 Allergens, Kosher Certified, and Non GMO Project Certified. So if you’ve got sensitivities you will find that I use Namaste Foods Products in a lot in my recipes.

Description

These Gluten Free Cinnamon Spice Bars With Sweet Ginger Icing are the perfect balance of moist and chewy. Not only are these bars gluten – free but dairy free as well. We used Namaste Foods Perfect Flour Blend. Namaste Foods is great because their flours are free from the Top 8 Allergens, Kosher Certified, and Non GMO Project Certified.


Ingredients

Scale

Gluten – Free Cinnamon Spice Bars

  • 2 cups Namaste Gluten Free Perfect Flour Blend
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1 tsp all spice
  • 1 Egg
  • 1 egg yolk room temp
  • 1 cup brown sugar room temp
  • 1/2 cup Sugar
  • 1 tsp vanilla
  • 1 1/2 sticks Earth Balance Butter melted
  • 1 tblsp Grapeseed Oil

Sweet Ginger Icing { Dairy Free }

  • 6 tbsp Softened Earth Balance Butter
  • 4 tbsp Unsweetened Coconut Milk
  • 1 tsp ginger spice
  • 1 tsp vanilla
  • 4 cups powdered sugar

Instructions

  1. Preheat oven to 350° Line a 9 x 13“ pan with parchment paper.
  2. In a medium bowl whisk together your flour, baking soda, cinnamon, and allspice … set aside.
  3. In a large bowl cream your egg, yolk, vanilla, and sugars. Add in your melted butter, grapeseed oil, and cream again.
  4. Fold your dry ingredients into the wet ingredients with a spatula until just combined. ( DO NOT BLEND, Namaste’s flour thickens fast, if you blend it will change the consistency of the batter and the recipe may not turn out. )
  5. Pour your batter into your lined baking pan.
  6. Place in your preheated oven and bake for 18-20 minutes. Insert with a toothpick to check when done.
  7. Once done baking. Remove from oven and let cool.
  8. While your bars are cooling start your icing.
  9. In a large bowl cream together your butter, vanilla, coconut milk, and ginger spice.
  10. Slowly add in your powdered sugar. Blend until smooth and creamy.
  11. Once bars are cooled spread your icing over the top.
  12. Top with crushed pecans
