Strawberry Lemon Cream Scones

 

John 13: 34

Love one another. As I have loved you, so you must love one another.

When we bless others we will be blessed. Blessing and loving others brings us peace and joy! We live in a society that steers people towards selfishness. The more self centered we are the less capacity we have to love. It’s not an easy road loving the unloveable, but I have found that as I walk in love (as God commands me)… the feelings of love accompany. We have to abandon all pride, greed and selfishness and decide to obey his word. It’s not always natural or easy but the sense of accomplishment that follows is liberating. It’s a life long effort of visible actions with great reward! Don’t just scrape the surface. Lets ask God to teach us to love Sacrificially.

Ingredients
  • 1 Box Namaste Muffin and Scone Mix
  • 2 Eggs (organic) beaten
  • 7 tbsp Dairy Free Butter
  • 1/3 cup coconut milk
  • 1 cup Fresh Strawberries diced
Lemon Cream Icing
  • 1/4 tsp 100 % Natural Crystallized Lemon I used brand "True Lemon"
  • 3/4 cup powdered sugar
  • 2 tbsp Organic Creamed Coconut Unsweetened

  1. Preheat oven to 400° Grease your cookie sheet and set aside. Pour your Namaste Scone Mix into a medium bowl. Cut your 7 tablespoons of cold dairy free butter into the dry mix using a fork until somewhat crumbly. Add your two beaten eggs and your milk. Stir until just combined. Gently fold in your strawberries. Next cut the dough in half and place each half on your cookie sheet. Press and shape them into two round discs about 1 to 2 inches thick. You may need to flour your hands to keep it from getting too sticky. Cut triangles using a knife making 8 slices in each disc totaling 16 scones. Bake approximately 15 minutes or until they turn a very light golden brown. When done baking let cool. Lemon Cream Icing: Pour your powdered sugar in a small bowl, add your true lemon and creamed coconut. ( you may add more true lemon to taste ) Mix until a nice creamy smooth texture. Now drizzle over the tops of your scones and enjoy!
