Grain Free Peanut Butter Chocolate Chunk Cookies

I was so excited when Otto’s Naturals sent me a bag of their Cassava Flour. I have been wanting to bake with Cassava Flour for awhile now. This was my first time ever baking with it and I have to say it truly is a winner in my book. These Peanut Butter Chocolate Chunk cookies turned out so moist, chewy, and soft. No grittiness or weird textures.

Cassava Flour is a grain free flour that comes from the Yuca root vegetable. Cassava is not only grain free and gluten free, but its nut free, vegan, vegetarian, and paleo as well. It makes it a great choice for those on selective diets. One thing to keep in mind is that although it’s grain free, it does not mean it’s low carb. It actually contains a pretty high carbohydrate profile, given the fact that it comes from a starchy tuber.

Otto’s Cassava flour can be used as a one to one substitute by weight for wheat flour in many recipes because of its mild flavor and light texture. You can expect it to have no additives, xantham gum, or fillers, how exciting is that?!

I’m not much of a drinker, but when I do have a drink… it’s usually something girly fufu and sweet! One of my favorite drinks is a flavored moscow mule. I’m usually all about the huckleberry. This time though I was craving watermelon. I live in North Idaho and although the summers are absolutely heavenly and gorgeous, they are extremely short! So we try to absorb every ounce of the summer vibes we can. That doesn’t just go for outdoor activities, it goes for the summertime food and drinks as well. Watermelon is another one of those fruits that just makes summer feel even more like summer. This super refreshing Watermelon Moscow Mule is low in sugar ( sugar coming naturally from the watermelon … basically sugar free ) , no refined sugars, and is low in carbs.

 

 

Healthy Low Carb Moscow Mule

I recently stumbled across this Zevia brand Ginger Beer and we absolutely love it! It’s naturally flavored, and has zero calories. To top it off, it has no sugar, no artificial sweeteners and is Non GMO.

If your looking for a really delicious Gluten Free Vodka that’s reasonably priced, then I suggest this Tito’s Handmade Vodka. This brand has no sugar or gelatin added.

Pineapple Raspberry Sorbet

 

Summertime and the livings easy! And isn’t that what we all love so much about summer? Last summer we went to Maui for a family vacation. It was like pineapple central. I have never had so many pineapple treats in one whole week! From pineapple’s all over my acai bowls, pineapple whip, pina colada’s, pineapple ice cream, to even drinking fresh pineapple juice out of an actual pineapple. I mean it’s pretty safe to say I was in pineapple heaven, and this girl has no complaints!

 

 

As I was reminiscing this week about our trip last July,  I started to get some serious major pineapple cravings. It’s been warming up here in North Idaho so I thought a pineapple sorbet sounded pretty darn amazing. This tropical frozen treat has a fun little twist… raspberries. That was non negotiable because pineapple and raspberries are my two most favorite fruits. It would be a sin if I left them out.

 

My Pineapple Raspberry Sorbet recipe can be made in a jiff, and it only requires 4 ingredients! Yes four ingredients. I knew that would make you smile 🙂 This delicious light summer treat is paleo, vegan, gluten free, dairy free, and has no refined sugars. How can it get any better than that? All you need is a food processor, frozen pineapple, frozen raspberries, better than half, and honey ( I like to buy local honey, it helps to combat allergies ). In my house, we are always in the mood for peanut butter! From our protein shakes to our toast to our fruit, to a good old fashioned pb & j sandwich. There’s no refute, it’s part of our family 😊 Peanut Butter is the driving force in making this recipe. I just couldn’t think of anything that sounded more delightful than a Chocolate Peanut Butter Cake, with of course some frosting on top to entice those taste buds even more. Sorry my cravings took over, haha!!  I mean chocolate and peanut butter are like tea and honey, you almost can’t have one without the other. The combination takes it to that next level of delish. Grain Free Peanut Butter Cheesecake Bites with Cashew Crust

I’m always in the kitchen baking, I mean I literally feel like I live in there. I usually bake with gluten free flours, but from time to time I like to mix it up and bake grain free. When I do its very important to me that I don’t sacrifice on flavor and texture. Grain Free can be a little more tricky to work with. I especially loved this Grain Free Peanut Butter Cheesecake Bites with Cashew Crust recipe, it was almost too easy to work with. I felt like a cheater haha! If you tend to lean more on the grain free side of the world then you definitely need to check out these Maple Cinnamon Almond Butter Cookies . These delicious bites are flourless, giving them an extra added bonus… Woohoo!

Cheesecake is one of my husbands favorite desserts! Anytime I say the word ” cheesecake  ” he will bend over backwards for me just to get me to make it for him! Needless to say he was drooling at the mouth over these delicious cheesecake bites. The cashew crust gives it this really nice creamy – buttery flavor. I love using cashews when I bake, they are lower in fat compared to other nuts and are rich in protein and magnesium. Another delicious recipe to try with cashews are these Dark Chocolate Dipped Cashew Cookies. 

 

Here are a few thoughts and tips :

  • Make sure when you cream your wet ingredients you stay PATIENT. It takes a few minutes for the ingredients to combine and smooth out.
  • Keep an eye on your cheesecake bites , oven temperatures vary.
  • If you go with the dairy free option, keep in mind the taste and texture are NOT real cream cheese so it may slightly differ… This is why I suggest Wayfare Cream Cheese , the flavor and texture is the closest I have found to real cream cheese. ( This is my personal opinion )

They know the truth about God because he has made it obvious to them. For ever since the world was created, People have seen the earth and sky. Through everything God made, they can clearly see his invisible qualities – his eternal power and divine nature. So they have no excuse for not knowing God.

I chronicle about my life and faith a lot here on my blog. However, I’ve never chronicled about my actual personal encounters with God himself. Hearing God’s voice and listening to him speak to me is a natural way of life when I’m walking closely with the spirit. It’s the most exhilarating feeling that just can’t be put into words. So today I wanted to do something different and unlike most of my blog posts. I want to share one of the many encounters that brought me to my knees in reverence and adoration for our loving heavenly father who is living and active right now in our lives.

Flashback to Saturday, August 6, 2016. I had spent the early part of the day with my mom at an outdoor art event in downtown Coeur d’ Alene. As we walked around we started to chat and I opened up with her about the church we had been attending for the last few months. I just wasn’t feeling it for some reason. It just didn’t feel like it was a fit for my family. I also expressed to her how I’ve been a church hopper for years. I was tired of it! I wanted to settle in somewhere and make it our home. I had been praying earnestly about it for years but got no real obvious answer.

Later that day as I was driving to the grocery store I felt this urge to pray about it again. So I did! For some reason this time I felt like I needed to grab the altar by the horn’s and be very specific about what I wanted God to do for me. So instead of my usual prayer that I prayed for years “ God show us a good church to go to “. I prayed in the power of the spirit and authority and asked God to give me a SIGN!! I needed it to be black and white no grey areas. I asked him to SHOW me the church!! I asked him to make it so CLEAR to me that there was no mistaking. I told him, “ Lord if you don’t show me the church specifically I will continue this awful church hopping and never truly find a place to call home”.

Shortly after that intense prayer, (as I was still driving to the store )  I drove by a church that I had heard through the grapevine was pretty awesome. I had a quick thought of “ Huh oh yeah that would be a good church to try “. A few minutes later I arrived at the grocery store. I grabbed a small basket and picked up a couple of the few items I needed. Suddenly I sensed the spirit tell me to go to the magazine isle. I remember thinking ” Ooookkkaaaayy… Magazine Isle? “ I figured he had something up his sovereign sleeve, but I really had no clue what it could be. So I listened, I went to the magazine isle. I stood there and started fumbling through some cooking magazines completely confused.

After about a minute I started to leave, I only had a few items left to grab and I was ready to check out. NOPE, Screeeeeeccchhh I wasn’t going anywhere! That still small voice told me I had to stay longer. At this point I’m starting to wonder what the heck is going on. I figured “ Oh well maybe theres someone he wants me to bump into here “. Little did I know there was a greater purpose under the surface! After about seven minutes of standing in that magazine isle waiting to be released… God told me I could go. I left the store got in my car and started driving home. As I drove, I passed back by that same church I passed on the way to the store. This time something was noticeably there that was NOT there before!! Two men, standing out in front of the church holding a BIG SIGN that said “ YOU BELONG HERE “ .

I instantly broke down into tears. I realized God orchestrated a divine appointment for me……  HE GAVE ME A SIGN ALL RIGHT… LITERALLY!!! He had me wait in that magazine isle longer so that I would see those men holding that sign at that time on my way home. My grocery trip should have only taken me a quick five minutes , had he not made me wait longer, those men would not have been out there yet! I’ve since been going to that church, and it has never felt so right! It is now my church home… Praise God!

I walked away from this experience with a galvanized sense of the Lords concern for what concerns me. He walks  BEHIND me and BEFORE me! With arms wide open he hears my prayers! He may not always answer on my timeline,  but he answers, and when he does … he MOVES mountains when he speaks!!!

When we bless others we will be blessed. Blessing and loving others brings us peace and joy! We live in a society that steers people towards selfishness. The more self centered we are the less capacity we have to love. It’s not an easy road loving the unloveable, but I have found that as I walk in love (as God commands me)… the feelings of love accompany. We have to abandon all pride, greed and selfishness and decide to obey his word. It’s not always natural or easy but the sense of accomplishment that follows is liberating. It’s a life long effort of visible actions with great reward! Don’t just scrape the surface. Lets ask God to teach us to love Sacrificially.

Give thanks in all circumstances, for this is God’s will for you in Christ Jesus.

What does it mean as a Christian to give thanks to God? I thought about that this week as I knew I would be writing this blog post. I felt stuck when I put my pen to the paper. I mean I love the Lord with all my heart and I’m so thankful for my family, for my friends, for my life, and for HIM most importantly. So I dug deeper and did a little searching in my studies.

Starting with a few scriptures  Psalm 107:1 Oh, give thanks to the Lord, for he is good! For his mercies endure forever. Ephesians 5:20 says this… always giving thanks to God the father for everything, in the name of our Lord Jesus Christ.

Giving thanks is so easy in the good times but what about the hard times? I feel like it’s so easy to focus on my pains and trials that I can easily lose sight of who he is and what he’s already done for me, and what he will continue to do for me. That’s why an attitude of gratitude is so so important. INatalie's Pineapple Candied Yamst draws me closer to him with a renewed sense of strength and power. Gratitude and Thanksgiving helps me to shift my focus on to God and away from my circumstances. Gratitude helps me to trust him when things look uncertain. Gratitude supersedes anxiety with peace.  Even if I’m not feeling it in the moment , choosing to express Gratitude with my words will eventually become a reality in my heart. Not only that but gratitude rejuvenates me spiritually, physically, and emotionally. So let’s practice having a Grateful /Thankful heart not just on Thanksgiving but everyday. Put your pen to that paper and start counting your blessings!! This is Gods will for us ??❤️

I’m all about quick and easy when I have to be. I’m constantly looking for ways to cut back on time in the kitchen. That’s what I love about this French Dip. The only cooking requirement… The Au Jus Sauce. Yes you heard that right! The Au Jus Sauce ?
Hearty and delicious you can’t go wrong with this perfect weeknight sandwich. Fuss free, that’s a promise!

 

Natalie’s Quick and Easy French Dip is a easy to make delicious recipe. Finding gluten free and dairy free dinner recipes can be such a challenge. I know first hand. When I first started eating gluten free and dairy free I was practically pulling my hair out trying to think of and find good quality meals that actually sounded yummy to make. It really was such a challenge but I was determined and I wasn’t going to let the frustration stop me. My family depended on it.

A huge part of the frustration was the fact that I was tired of trying to make two different dinners every single night. I found myself cooking two seperate meals a night. It was so hard and it just wore me out. I now realize its the simple meals that make the best gluten free and dairy free dinners like tacos and french dip. Then if the kids want cheese it’s easy to throw on top.

I love Sundays! Sundays are the one day my husband gets off early, and usually the one day a week we get to eat dinner together as a family, unless it’s his day off. Tonight wasn’t just about the dinner. I had cookies on my mind. So the cookie monster in me got to work!
Figs… If you haven’t tried them, you need to! There like a little sweet, chewy, delicious treasure. Especially in cookies ? They’re also packed with fiber and nutrients making them even more enticing! Which leads me to bring you my Toasted Coconut Pecan Fig cookies. These were so soft, moist and chewy. Definitely the pinnacle of perfection! Yes yes yes! I’m so excited for you to try these! Your kids will love them too!! Stopping at one is just not an option! Let me know what you think?

Ingredients List:

 

  • 1 3/4 cupBobs Red Mill Gluten Free 1 to 1 Flour
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 3/4 cup brown sugar ( Packed )
  • 1/4 cup natural honey
  • 2 tbsp pecan chips
  • 1/2 cup vegan butter Softened
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cups flaked shredded coconut
  • 1 cup dried figs ( Diced )
Topping’s
  • 24 Pecan Pieces

How To Make :

Preheat oven to 375 First combine your flour, baking powder, and salt in a medium bowl, sift together. In a large bowl, add in your brown sugar, honey, and butter, mix until creamed. Blend in your egg, and vanilla. Once blended add in your figs, stir together. Now add in your dry ingredients and mix everything together thoroughly. Next form 1 inch balls and drop and roll them into your flaked coconut. Place the Cookie on your greased baking sheet and top with a pecan piece. Place in yo
