Chocolate Chip Banana Bread Bars

A Banana Bread lovers dream come true! Let’s give a big round of applause to these Chocolate Chip Banana Bread Bars. We are pulling out all the stops when it comes to these delicious banana chocolate chip bars. These gluten free banana bread bars are super moist, fluffy, and soft with that chocolatey ooey gooeyness that’s going to send your taste buds into overdrive! What’s wrong with that?

Dairy Free Option:

We have included a dairy free option in here for you as well. I can have dairy from time to time just not on a daily basis. I know some of you can’t have it at all so I really try to strive to have 80 to 90% of my recipes be dairy free. It’s not always feasible, but for those of you that stick it out with me anyways, THANK YOU! It really means so much.

Ripe Banana Recipe:

It’s not an old wise tale folks, you want those naner bananers to be ripe! The riper the better! It’s what gives the banana bread it’s sweet banana-y flavor. Now you don’t want them so black that they could be rotten. Then Houston you have a problem… big no bueno and a big YUCK!

So here’s what you want them to look like. A ripe banana is deep yellow with brown spots all over it, and is quite soft to the touch. The banana should open real easily unlike unripe bananas. There are definitely some added nutritional benefits to these ripe bananas as well. A ripe banana is easier to digest than a banana that has not ripened. It also carries with it higher levels of antioxidants. So the more it has aged… with it come more immune boosting properties.

Ingredients You Will Need:

  • 2 1/4 cups Bobs Red Mill Gluten Free 1 to 1 Flour
  • 1/2 tsp. baking soda
  • pinch of sea salt
  • 2 large mashed ripe bananas
  • 1 egg { room temp }
  • 1 cup dark brown sugar { packed }
  • 1/2 cup regular sugar
  • 1 stick melted earth balance butter { 1/2 cup }
  • 1 tsp vanilla
  • 1 cup nestle dark chocolate chips { or enjoy life brand for dairy free }

Ingredients

Scale
  • 2 1/4 cups Bobs Red Mill Gluten Free 1 to 1 Flour { scoop flour with a spoon into measuring cup and level off with the back end of a knife. Do not scoop flour directly from the bag it will give you an inaccurate measurement. }
  • 1/2 tsp. baking soda
  • pinch of sea salt
  • 2 large mashed ripe bananas
  • 1 egg { room temp }
  • 1 cup dark brown sugar { packed }
  • 1/2 cup regular sugar
  • 1 stick melted earth balance butter { 1/2 cup }
  • 1 tsp vanilla
  • 1 cup nestle dark chocolate chips { or enjoy life brand for dairy free }

Instructions

  1. Preheat oven to 350 degrees and line a 9 x 13 inch baking pan with parchment paper and grease.
  2. In a medium bowl combine flour, baking soda, and salt… set aside.
  3. In a large bowl blend egg, sugars, and vanilla.
  4. Next mix in mashed bananas and melted butter.
  5. Now slowly mix your dry ingredients into your wet ingredients.
  6. Fold in your chocolate chips.
  7. Pour your batter into your lined baking pan.
  8. Top with more chocolate chips.
  9. Bake approximately 24 to 26 minutes. Oven temperatures may vary so keep a close eye on it and check with a toothpick.
  • Prep Time: approx. 15 minutes
  • Cook Time: approx. 24 - 26 minutes
