These Coffee Snickerdoodle Cookies are a fun twist on your classic snickerdoodle cookie recipe. Crispy on the outside and chewy on the inside makes for one delicious experience!

Coffee Snickerdoodle Cookies

Snickerdoodles in Summer are a thing, I bet you didn’t know that? Haha, well they are my thing all year round. I’m a rule breaker when it comes to certain foods for certain seasons. If you like it and crave it, make it! I was daydreaming of snickerdoodles last week and decided to make some. These Coffee Snickerdoodle Cookies are such a delicious fun twist on your classic snickerdoodle cookie recipe. The coffee gives these cookies a nice little zing! Coated in a sweet cinnamon and sugar coating for the true snickerdoodle taste.

Gluten Free Snickerdoodles

These gluten free snickerdoodles are made without cream of tartar. They are incredibly easy to make and are perfect for anyone with food allergies or sensitivities. We used Namaste Foods Perfect Flour Blend for this easy snickerdoodle recipe. Namaste Foods Perfect Flour Blend is ” perfect ” because it is Gluten Free Certified, Non-GMO Project Verified, Free From Top 8 Food Allergens, Kosher Certified, Plant Based, and is Whole Grain Certified. It’s a great 1 to 1 cup ratio substitute for wheat flour.

Ingredients For Gluten Free Snickerdoodles

Coffee Snickerdoodle Cookies

  • 2 cups Namaste Foods Perfect Flour Blend
  • 2 tsp. baking powder
  • 1 tsp. espresso powder ( We used Medaglia Espresso Powder )
  • 1 stick = ( 1/2 cup ) Earth Balance Butter – softened
  • 1 1/4 cup sugar
  • 1 tsp. vanilla extract
  • 1 egg

Topping

  • 1/2 cup sugar
  • 1 tbsp. cinnamon

How To Make Gluten Free Snickerdoodles

  1.  Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
  2. In a medium bowl add your flour, baking powder, espresso powder, mix until combined and set aside.
  3.  In a large bowl cream your butter, sugar, and vanilla.
  4. Add egg and blend in.
  5. Next add your flour mixture to the wet ingredients and mix with a spatula or wooden spoon until thoroughly combined.
  6. Using a cookie scoop, scoop your batter and roll into balls and then roll into your cinnamon sugar mixture.
  7. Place cookie balls on cookie sheet and bake for 9 to 10 minutes. ( oven temperatures may vary )
  8. Let cool and enjoy!

Topping

  1.  Mix sugar and cinnamon in a small bowl. Set aside until your ready to roll and coat your cookies.
