Grain Free Peanut Butter Chocolate Chunk Cookies

I was so excited when Otto’s Naturals sent me a bag of their Cassava Flour. I have been wanting to bake with Cassava Flour for awhile now. This was my first time ever baking with it and I have to say it truly is a winner in my book. These Peanut Butter Chocolate Chunk cookies turned out so moist, chewy, and soft. No grittiness or weird textures.

Cassava Flour is a grain free flour that comes from the Yuca root vegetable. Cassava is not only grain free and gluten free, but its nut free, vegan, vegetarian, and paleo as well. It makes it a great choice for those on selective diets. One thing to keep in mind is that although it’s grain free, it does not mean it’s low carb. It actually contains a pretty high carbohydrate profile, given the fact that it comes from a starchy tuber.

Otto’s Cassava flour can be used as a one to one substitute by weight for wheat flour in many recipes because of its mild flavor and light texture. You can expect it to have no additives, xantham gum, or fillers, how exciting is that?!

Ingredients you will need for this recipe

  • Otto’s Cassava Flour
  • Baking Soda
  • Sea Salt
  • Vanilla Extract
  • 1 Egg ( room temp )
  • 1 Yolk ( room temp )
  • Creamy Peanut Butter
  • Earth Balance Butter ( softened )
  • Brown Sugar
  • Sugar
  • Enjoy Life ( brand ) Chocolate Chunks

Growing up I had a couple favorite ice creams. Neapolitan was on that list. These Neapolitan Mini Bundt Cakes are a blast from my past! I had so much fun developing the recipe. It took me 4 weeks, yes 4 weeks!! But, they are perfected and delicious and would make such a fun birthday treat or any occasion for that matter. Not to mention I made them with a new gluten free flour I tested out by Namaste Foods. I was so impressed with the flavor and how fine the texture is. I also love that the flour is free of the top 8 allergens. So for those of you that are really limited, I have your back 🙂 … I know your going to love it! I have given you two options for your topping, a chocolate ganache or a strawberry icing. Hey why not do both?! Sprinkle  some love on top and you will be enjoying a trip back down memory lane. With the New Year fast approaching and resolutions being developed and refined, I sit here meditating and fostering my own intentions and goals. As I do I  quickly realize I have only one that really makes a difference in every aspect of my life, and that is to chase God like never before!! I want every step I take to begin and end with him. When we walk in step with God, completely surrendered and guided by him, nothing can shake us. We are solid and secure with our feet planted… standing on a firm foundation! Not only that, but when we chase God and not what we want … an abundance of blessings and favor will be poured out into our lives that there will not be enough room to store it!! So here’s to the New Year … Old things have passed away, Behold the new has come!! ~ 2 Corinthians 5:17

Chase God, and discover rest and favor inconceivable!!!  🌟🙏🏻

Nothing that happens in our life is wasted. God works all things together for good. He uses those setbacks, frustrations, and difficulties to glorify His name and display His work in our lives.  I never really understood what good God could bring forth from all the health struggles I endured over the years. Looking back the evidence is so clear. He was refining, perfecting, and preparing me to go all the way with him. This purifying process was equipping me for greater things to come… skimming off all impurities and building in me mighty muscles of faith! We’ve been called according to his purpose and we have a destiny to fulfill. No matter what life throws our way, we can take confidence and assurance in the fact that God has a master plan and he will use it for the good… It’s without question! God is all powerful, will you trust him enough to hand the reigns over to him?

These Chewy Gingersnap cookies are just that… CHEWY! There’s really no excuse to pass these up. They are incredibly soft and chewy, and I promise you you won’t be able to stop at just one!

We use Bob’s Red Mill Gluten Free 1 to 1 Flour for this gluten free Gingersnap cookies recipe, and we love it! It truly bakes the best ginger snap cookie.

The gluten free gingersnap cookie itself is dairy free but the white chocolate on top is not. So take it or leave it if you can or can’t do dairy.

We rolled these gluten free gingersnap cookies in cane sugar and boy does it give it that nice extra touch. If your baking for Christmas you need to add these gluten free gingersnap cookies to your baking lists. They are always such a big winner!

I hope you like these gluten free gingersnap cookies as much as we do!

How to make gluten free gingersnap cookies

  • 2 3/4 cup bobs red mill gluten free 1 to 1 flour
  • 2 tsp baking soda
  • 1 1/2 tsp ginger spice
  • 1 tsp cinnamon
  • pinch cloves
  • pinch sea salt
  • 1 cup Organic Cane Sugar
  • 1/2 cup light brown sugar
  • 1/3 cup molasses
  • 1 Egg cage free
  • 1 yolk
  • 1/2 cup Dairy Free Butter ( I used a stick of Earth Balance ) softened
Topping
  • 1/2 cup Organic Cane Sugar place in a small bowl to roll cookies in
  • 1/2 cup melted white chocolate chips you can buy dairy free versions online
