Banana Oat Muffins with a vegan option are a healthy breakfast recipe. These delicious gluten free oat muffins are moist, tender, and are naturally sweetened with no refined sugar. An easy one bowl, guilt free treat that has all the flavor of a slice of banana bread!!

Banana Oat Muffins :

Say hello to these Banana Oat Muffins! I don’t know what it is, but lately I have been on a banana craze. From in my oatmeal, to my protein shakes and everything in between. I had some perfectly ripe bananas staring at me on the counter and I just couldn’t let them go to waste.

These healthy banana muffins are an excellent choice for breakfast, or snack on the go. You are going to love how moist, soft, and fluffy they are.  When I was in the kitchen making these I was having one of those lazy moments where I didn’t want to have a bunch of dirty dishes to clean, so I put all of the ingredients in one bowl and poof out came this delicious one bowl banana muffin recipe haha! I’m sure you can relate 🙂

Coconut Sugar: 

What makes these banana muffins so healthy is that they are gluten free and naturally sweetened. We used Organic Madhava Coconut Sugar to sweeten these delicious gluten free banana oat muffins. Coconut sugar is a wonderful alternative to table sugar. It’s low in fructose and has a low glycemic index. There are some amazing benefits to coconut sugar that table sugar just does not have. Coconut sugar is not refined and not chemically altered. Table sugar is fully void of anything healthy where as coconut sugar is high in antioxidants and has a relatively decent amount of nutrients such as iron, calcium, and potassium. From time to time I like to swap out the cane sugar and bring you more healthy alternatives such as coconut sugar. I’ve also noticed you don’t have to quite use as much as you would if you were baking with cane sugar. WIN!!!

One Bowl Banana Oat Muffin Recipe Vegan

Vegan Option:

If you are vegan I have good news, we have a vegan banana oat muffin recipe option included. Right now it’s hard for some to get eggs. So if your looking for a delicious naturally sweetened muffin recipe then this recipe is for you! I have to say, I sampled these muffins out to close family and they loved them both equally. They speak for themselves… Vegan Banana Oat Muffins are just as good as the original Banana Oat Muffin Recipe. So there you have it, pick up the recipe below and enjoy 🙂

Tips For Banana Oat Muffins:

  • When measuring your flour make sure your not scooping directly from the bag. This can cause inaccurate measurements and your recipe may not turn out. Use a spoon to scoop the flour from the bag to the measuring cup and level it off with the back end of a knife.
  • Use a large cookie scoop to scoop the batter into the cupcake liners. It’s a lot less messy 🙂
  • Make sure you don’t use a mixer when combining the ingredients. Either use a spatula or wooden spoon to mix.
  • Make sure your Cashew Milk is Unsweetened. I use this brand.
  • DON’T let your batter sit out. Scoop it immediately into cupcake liners and bake.

Fluffy Tender and Moist Banana Oat Muffins Recipe

Ingredients You Will Need:

  • Bobs Red Mill Gluten Free 1 to 1 flour
  • Bobs Red Mill Gluten Free Quick Rolled Oats
  • baking soda
  • baking powder
  • ground flax seed
  • cinnamon
  • pinch of salt
  • coconut sugar ( I used Madhava )
  • vanilla extract
  • grapeseed oil
  • cage free eggs
  • cashew milk ( I used Silk Unsweetened Cashew Milk )
  • 2 large ripe bananas ( mashed )

Ingredients

Banana Oat Muffins

  • 1 1/2  cup Bobs Red Mill Gluten Free 1 to 1 flour
  • 1/4 cup Bobs Red Mill Gluten Free Quick Rolled Oats
  • 1/4 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • pinch of salt
  • 3/4 cup coconut sugar
  • 1 tsp vanilla
  • 1/3 cup grapeseed oil
  • 2 cage free eggs
  • 2 tbsp cashew milk
  • 2 large ripe bananas ( mashed )

Vegan Option

  • 1 cup Bobs Red Mill  Gluten Free 1 to 1 flour
  • 1/2 cup Bobs Red Mill Gluten Free Quick Rolled Oats
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • pinch salt
  • 1 tbsp ground flax seed
  • 3/4 cup coconut sugar
  • 1/3 cup grapeseed oil
  • 5 tbsp unsweetened cashew milk
  • 2 large bananas  ( mashed )

Instructions

Banana Oat Muffins

  1. Preheat oven to 350 degrees and line a cupcake tin with cupcake liners.
  2.  In a Large bowl mix together your flour, oats, baking soda, baking powder, salt, and cinnamon.
  3. Add in coconut sugar and mix again.
  4. Make a well in the center of the flour mix and add in vanilla, eggs, oil, cashew milk, mashed bananas, and mix until thoroughly combined. Do not blend … mix with a spatula, or wooden spoon.
  5. Using a large cookie scoop… scoop batter immediately into cupcake liners.
  6. Place in the oven and bake for approximately 20 to 23 minutes. ( Oven temperatures may vary, check with a toothpick. )
  7. When done let cool and enjoy 🙂

    These beauties look incredibly moist and delicious! I’m so excited about the vegan version I have a bunch of bananas just waiting to be baked into these muffins, can’t wait!
