Insanely delicious and easy to make Gluten-Free Lemon Brownies! These fudgy glazed lemon brownies are soft, chewy, and full of fresh lemon taste.

Gluten-Free Lemon Brownies

Easy … Breezy … Beautiful Lemony Brownies. My sweet tooth kicked in again this week ( what’s new … haha ). With a little bit of summertime left, I thought I would pick up the lemons and do some baking.

These fudgy glazed lemon brownies are all the rave and more. Super soft, and chewy, with fresh lemon flavor, and topped with a smooth sweet lemon glaze. This is definitely a recipe you will want to make over and over again!

Tips For Fudgy Glazed lemon Brownies

  • When measuring your flour make sure your not scooping directly from the bag. This can cause inaccurate measurements and your recipe may not turn out. Use a spoon to scoop the flour from the bag to the measuring cup and level it off with the back end of a knife.
  •  For an even more fudgy dense brownie texture, store lemon brownies in an airtight container overnight before indulging.
  • Always a good idea to use a hot knife for a clean slice… run it under hot water, then dry off and slice… repeat!
  • Top glaze with some fresh lemon zest or candy sprinkles for a celebration.

Ingredients To Make Fudgy Glazed Lemon Brownies

Lemon Brownies

  • 1 cup Namaste Foods Perfect Flour Blend
  • 1 tsp. baking powder
  • 3/4 cup sugar
  • 2 tbsp. lemon zest
  • 3 tbsp. fresh lemon juice
  • 1 tsp. vanilla
  • 1 stick Earth Balance Butter softened NOT melted = 1/2 cup
  • 1 egg
  • 1 egg yolk

Lemon Brownie Glaze

  • 2 tbsp. Earth Balance Butter
  • 2 tbsp. corn syrup
  • 1 1/2 tbsp. fresh lemon juice
  • 1/2 tsp. vanilla
  • pinch of salt
  • 3 1/2 cups powdered sugar
  • 2 tbsp. coconut milk

 

How To Make Gluten-Free Lemon Brownies

Lemon Brownies

  1. Preheat oven to 350 degrees.
  2. Grease and line a 8 x 8 square inch baking pan with parchment paper.
  3. In a medium bowl combine flour and baking powder, then set aside.
  4. In a large bowl add butter, microwave cold butter until softened, this shouldn’t take longer than 20 to 30 seconds. Do NOT melt butter, this will change the consistency and the recipe may not turn out.
  5. Once butter is soft… add sugar, lemon zest, lemon juice, vanilla, and blend until combined.
  6. Add egg, egg yolk, and blend again.
  7. Now add flour mixture to wet ingredients and mix in until thoroughly combined.
  8. Pour into prepared square baking pan and bake for 20 minutes.
  9. Let cool completely before adding the glaze.

Lemon Brownie Glaze

  1. In a large microwave safe bowl add butter and corn syrup.
  2. Microwave for 20 to 30 seconds just until butter is melted.
  3. Add lemon juice, vanilla, salt, and coconut milk. Mix until combined.
  4. Add in powdered sugar in cup increments.
  5. Blend until smooth consistency.
  6. Pour over gluten- free lemon brownies and let set. ( I like to let it sit overnight for a more dense, fudgy texture or just chill it for 20 to 30 minutes before slicing to allow it to set. )
  7. Slice and enjoy 🙂

Lemon Brownies

  • 1 cup Namaste Foods Perfect Flour Blend
  • 1 tsp. baking powder
