Gluten-Free Meatloaf Recipe

This Gluten-Free Meatloaf Recipe has a special place in my heart and I am thrilled to share it with you. It has been a family favorite for a very very long time. I actually developed this recipe over 15 years ago. Back then I wasn’t gluten free – so when I became gluten free in 2012 I tailored it to fit my new gluten free lifestyle.

Classic comfort food at it’s finest! This Gluten-Free Meatloaf Recipe is filled with amazing flavor, holds together, and is topped with the best – thick, sweet, and tangy glaze eeevvvaaa! Oooo come to momma!

No bells and whistles here – this savory meatloaf is incredibly easy to make and is super satisfying. Serve it with mashed potatoes, roasted carrots, green beans; there’s really no shortage of ideas.

Got leftovers? Then you got yourself some meatloaf sandwiches for the next day. And let me tell you, this recipe makes the best meatloaf sandwiches!

Keep in mind …

  • that A-1 sauce is considered gluten-free but it is not certified gluten free. If you want to leave the A-1 sauce out just add an additional teaspoon of worcestershire sauce in it’s place.
  • Greasy soggy meatloaf is no beuno! You will want to drain any excess grease out of the pan; I like to do it when it’s finished cooking. I just use a baster and it gets zeeee job done!
  • You can easily make this homestyle meatloaf low carb. You will just replace regular ketchup with low sugar or sugar free ketchup – Yeee-Hawww!

Ingredients To Make Gluten-Free Meatloaf Recipe

For The Meatloaf

ground beef

green bell pepper

yellow onion

almond flour

rubbed sage

salt

black pepper

dijon mustard

ketchup

Worcestershire Sauce 

ketchup

egg

cashew milk

 

For The Topping

ketchup

tomato paste

Worcestershire

A-1 steak sauce

 

How To Make Gluten-Free Meatloaf

Step 1. Preheat oven to 350 degrees – lightly grease and line with parchment paper a 9×5 inch loaf pan.

Step 2. In a small pan add olive oil and saute onion and bell pepper on medium heat for 5 minutes until veggies are tender and translucent. Remove from heat and set aside to cool.

Step 3. In a small bowl add all of your topping ingredients, stir until fully combined and set aside.

Step 4. In a large bowl add meat, almond flour, sage, salt, pepper, dijon mustard, worcestershire, ketchup, egg, yolk, and cashew milk. Mix until fully combined.

Step 5. Next add and mix in your cooked onion and bell pepper.

Step 6. Press mixture into prepared loaf pan.

Step 7. Spread topping evenly over top of meatloaf, place in the oven and bake 38 to 40 minutes or until thermometer inserted reads 160 degrees.

Step 8. Remove from oven to let cool.

For The Meatloaf

  • 1 pound ground beef
  • 1/4 cup chopped green bell pepper
  • 1/3 cup chopped yellow onion
  • 3 tsp. olive oil
  • 1/2 tsp. rubbed sage
  • 1/2 cup almond flour
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 tsp. dijon mustard
  • 1 – 1/2 tablespoon Worcestershire Sauce 
  • 1 tablespoon ketchup
  • 1 egg
  • 1 egg yolk
  • 1/4 cup cashew milk

For The Topping

  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire
  • 1 teaspoon A-1 steak sauce
