Gluten-Free Apple Cinnamon Muffins are so delicious and full of warm cinnamon flavor and yummy apple bits. These tender, soft muffins are grain-free, dairy-free, and topped with a sweet crumb topping.

Gluten-Free Apple Cinnamon Muffins

“A” is for Apple and these Gluten-Free Apple Cinnamon Muffins are  “A” apple-icious!

We have had some crazy cold weather here in Idaho in the last few weeks and I thought what better way to warm up then with some Apple Cinnamon Muffins. These Gluten-Free Apple Cinnamon Muffins are tender, soft, moist, and filled with yummy apple bits, hints of cinnamon, and topped with a sweet crumb topping.

This apple cinnamon muffin recipe is grain-free, dairy-free, and perfect for those with food sensitivities or those just trying to cut back.

What kind of Apples should I use?

For this recipe we used Honecrisp. It’s important to use a crisp apple when baking. You definitely don’t want a soggy mushy apple. Golden Delicious and Granny Smith apples are also great apples to bake with.

Grain-Free Flour

I’d like to note that for this recipe we used Bake Good Paleo Flour . Bake Good is not in stores, you have to buy it online. I did however test these with Bobs Red Mill Paleo Baking Flour and it worked pretty well. It doesn’t rise quite as nicely but it tastes just as great! I do prefer the Bake Good brand but if you don’t have time to order it, you can definitely sub it out with Bob’s Red Mill Paleo Baking Flour.

Ingredients needed

Gluten-Free Apple Cinnamon Muffins

  • 2 1/2 cups Bake Good Paleo Flour ( you can also sub Bob’s Red Mill Paleo Baking Flour )
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 cup olive oil
  • 2 eggs
  • 1 cup sugar
  • 3/4 cup peeled and chopped honeycrisp apples. Approximately 2 small apples or 1 large apple.
  • 2 tbsp. Apple Cider Vinegar
  • 1 tsp. Vanilla
  • 1/3 cup cashew milk

Sweet Crumb Topping

  • 1/4 cup brown sugar
  • 1/4 tsp. cinnamon
  • 1/2 cup flour
  • 2 tbsp. melted Earth Balance Butter

 

Gluten-Free Apple Cinnamon Muffins

  1. Preheat oven to 350 degrees and line a cupcake tin with cupcake liners, set aside.
  2. In a small bowl mix together topping ingredients and set aside.
  3. In a medium bowl add flour, baking soda, cinnamon, and mix together with spatula.
  4. In a large bowl add oil, sugar, vanilla, cashew milk, and stir together until combined.
  5. Add eggs, and mix with spatula again.
  6. Gently mix flour into wet ingredients, stir until combined.
  7. Gently fold in apples.
  8. Add your apple cider vinegar and mix again.
  9. Using a large cookie scoop, scoop batter into your lined cupcake liners.
  10. Top each muffin with a sprinkle of crumb topping.
  11. Place in the oven and bake 18- 22 minutes. Check with a toothpick, temperatures may vary.
