Gluten Free Strawberry Cupcakes

Keeping it BERRY fresh with these delicious Gluten-Free Strawberry Cupcakes!

These Strawberry Cupcakes are the best gluten free cupcakes bursting with explosive strawberry flavor! Incredibly tender and moist, filled with fresh chopped strawberry chunks of delight. Topped with a marvelous strawberry buttercream frosting. There’s no turning these beauties down!

BERRY Important Tips

Here are some basic useful tips for baking these strawberry cupcakes.

  • When measuring your flour make sure your not scooping directly from the bag. This can cause inaccurate measurements and your recipe may not turn out. Use a spoon to scoop the flour from the bag to the measuring cup and level it off with the back end of a knife.
  • Have your strawberries chopped and ready to go before you get started. You don’t want to blend everything together and then realize your strawberries aren’t prepped and ready to be added to the batter. ( I did that once … yes me ha! Talking from experience here. )
  • If you don’t have strawberry extract … no problem!  I tested this recipe without it, and it’s just as good.
  • This recipe can be made with real dairy butter. I tested it … all the measurements remain the same. Just swap it out!
  • It’s good to note that Earth Balance Butter has a new ” unsalted buttery sticks line”. If you decide to use unsalted butter sticks whether you are using Earth Balance or real butter, be sure to add 1/4 tsp. of salt to this recipe.
  • If you forget to leave your butter out to room temp. You can soften your cold butter sticks in a microwave safe bowl for 10 to 20 seconds. You don’t want the butter melted – just soft.

Ingredients To Make BERRY delicious Cupcake-Aroos

  • 1 3/4 cup Bob’s Red Mill 1 to 1 gluten free flour
  • 1 1/4 cup sugar
  • 1 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 stick Earth Balance Butter ( salted ) softened – not melted
  • 1/2 cup egg whites
  • 1/2 cup unsweetened cashew milk
  • 3/4 cup chopped fresh strawberries
  • 1 tsp. strawberry extract
  • 1 tsp. vanilla extract
  • 1 tbsp. apple cider vinegar

Strawberry Frosting

  • 2 sticks Earth Balance Butter room temp or softened ( not melted )
  • 3 cups powdered sugar
  • 1 -1/2 tsp. strawberry extract
  • 1 tsp. vanilla extract
  • pink food coloring

Description

These Gluten Free Strawberry Cupcakes are the best gluten free cupcakes for any occasion. Explosive strawberry flavor will leave you coming back for seconds!


Ingredients

Scale
  • 1 3/4 cup Bob’s Red Mill 1 to 1 gluten free flour
  • 1 1/4 cup sugar
  • 1 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 stick Earth Balance Butter ( salted ) softened – not melted
  • 1/2 cup egg whites
  • 1/2 cup unsweetened cashew milk
  • 3/4 cup chopped fresh strawberries
  • 1 tsp. strawberry extract
  • 1 tsp. vanilla extract
  • 1 tbsp. apple cider vinegar

Strawberry Frosting

  • 2 sticks Earth Balance Butter room temp or softened ( not melted )
  • 3 cups powdered sugar
  • 1 –1/2 tsp. strawberry extract
  • 1 tsp. vanilla extract
  • pink food coloring

Instructions

  1. Preheat oven to 340 degrees and line a cupcake tin with cupcake liners.
  2.  In a medium bowl combine/mix all dry ingredients and set aside.
  3. In a large bowl add butter and egg whites and blend until combined.
  4. Add and stir in strawberry extract, vanilla extract, cashew milk, and acv.  Batter may separate a little – this is totally fine.
  5. Slowly add in dry ingredients and blend until combined.
  6. Gently fold in chopped strawberries.
  7. Using a cookie scoop, scoop batter into cupcake liners. Fill each liner about 2/3 full.
  8. Place in the oven and bake approximately 20 to 23 minutes. Oven temperatures may vary. Check with a toothpick for doneness.
  9. Let cool completely before frosting.

Strawberry Frosting

  1. in a large bowl blend butter until smooth.
  2. Add in strawberry extract, vanilla extract, and *desired amount of food coloring and blend together.
  3. Add powdered sugar in small increments and carefully blend into butter mixture.
  4. Continue to blend scraping down the sides of the bowl until smooth and creamy.
  5. Scoop Frosting into piping bags and pipe onto cooled cupcakes.
  6. Enjoy!
