This easy Gluten Free Banana Cake is super soft, fluffy, and mega moist. A delicious smart way to use up those overripe bananas!

Gluten Free Banana Cake

This is what sweet dreams are made of! Our Gluten Free Banana Cake is incredibly moist, soft & fluffy, and topped with a delicious cream cheese frosting. My blog name should actually be called Natalie Way Bakes Bananas because I think I bake more banana goodies now than anything else! Hey – well I always have ripe bananas laying around can’t let them go to waste.

Dairy Free Banana Cake ?!

Yes-sir-eee! This is a dairy free banana cake, and there’s no telling. The cream cheese frosting however can go either way. For the dairy free version of the cream cheese frosting I like to use Tofutti brand cream cheese or Wayfare brand. Both are excellent and compliment this dairy free banana cake so well.

Here’s a quick rundown of your ingredients

  • Namaste Perfect Flour Blend
  • baking powder
  • baling soda
  • cinnamon
  • vanilla extract
  • sugar
  • eggs
  • egg white
  • ripe bananas
  • Earth Balance Butter stick
  • unsweetened cashew milk
  • dairy free cream cheese
  • powdered sugar

Tips to make this Dairy Free Banana Cake

  • Make sure your cashew milk is unsweetened. Some of them are vanilla flavored, make sure it’s the regular flavor not vanilla.
  • When measuring out your flour, use a spoon to scoop the flour into your measuring cups. This will give you a more accurate measurement. ( Do not pack down flour )
  • Don’t over mix the flour into the wet ingredients. Namaste Foods Perfect Flour Blend tends to thicken SUPER fast. So just mix with a spatula until combined. If you over mix, the cake will be gummy. And that is a big NO BUENO!
  • If you would like to use a round 8 inch cake pan feel free. Keep in mind the cooking time will be longer. A 8 inch round cake pan cooks for a total of 45-50 minutes. Keep an eye out! Also don’t forget to cover with foil after 15 minutes.

Looking for a delicious way to use up those overripe bananas? This Gluten Free and Dairy Free Banana Cake recipe is the way to go. Super easy to make and topped with a sweet and smooth Cream Cheese Frosting … nothing short of delicious!


Ingredients

Gluten Free Banana Cake Recipe

  • 2 cups Namaste Perfect Blend Flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1 stick Earth Balance Butter softened
  • 1 tsp. vanilla extract
  • 1 1/4 cup sugar
  • 2 eggs
  • 1 egg white
  • 1 cup mashed ripe bananas
  • 1/4 cup cashew milk

Cream Cheese Frosting

  • 1 block ( 8 oz. ) cream cheese or dairy free ( I like Tofutti brand for dairy free )
  • 2 tsp. vanilla extract
  • 1 tbsp. unsweeetened cashew milk ( I use silk brand )
  • 2 1/2 cups powdered sugar

Instructions

Gluten Free Banana Cake Recipe

  1. Preheat oven to 350 degrees and line a 9×13 inch cake pan with parchment paper.
  2. In a medium bowl add flour, baking powder, baking soda, cinnamon, and mix together.
  3. Grab a large bowl and add softened butter, vanilla, sugar, and cream together.
  4. Next quickly blend in eggs and egg white. ( don’t over mix )
  5. Gently using a spatula, stir in mashed bananas.
  6. Fold in flour just about halfway then add in milk and continue folding together until just combined. ( Don’t over mix. Namaste perfect flour blend thickens fast and if you over mix it will turn out gummy. )
  7. Pour batter into prepared pan.
  8. Bake for 15 minutes then cover with foil and continue baking another 18-20 minutes for a total baking time of 33-35 minutes. Check with a toothpick for doneness.
  9. Let cool completely before frosting.

Cream Cheese Frosting

  1. In a large bowl blend your cream cheese until smooth and creamy.
  2. Add in vanilla, milk, and blend again.
  3. Slowly add in powdered sugar and blend until completely mixed together. The frosting will be thick. If you want to thin it out more , then feel free to add more cashew milk 1 teaspoon at a time.
  4. Frost cooled cake and enjoy!
