Peppermint Chocolate Truffles

A chocolate lovers dream come true! It doesn’t get more chocolatey than these Peppermint Chocolate Truffles. These peppermint chocolates are filled with a creamy, rich, peppermint filling and then dipped in a smooth chocolate ganache. Who can compete with that? I don’t even think white chocolate can.. ha!

These peppermint chocolates are vegan, and gluten free. We used Enjoy Life Dairy Free Chocolate Mini Chips for both the truffles and the ganache coating. Our peppermint truffles are so delicious you would never know we nixed the dairy!

This peppermint truffles recipe is probably the easiest no-bake dessert you’ll make this holiday. And the pure peppermint flavor, is sure to bring some cheer!

Peppermint Chocolates

Ingredients To Make Peppermint Truffles

  • 2 bags of Enjoy Life Mini Morsels
  • 2 -5.4 oz. cans of Native Forest Coconut Cream
  • Peppermint Extract
  • Coconut Oil

How To Make Peppermint Truffles

  1. In a medium bowl add your bag of enjoy life mini chips and 1/2 cup of coconut cream.
  2. Microwave for 30 second increments until melted. ( Stirring between each time )
  3. Stir in peppermint extract.
  4. Cover and let cool on the counter for 30 minutes.
  5. Then place in the refrigerator overnight.
  6. Remove from fridge and line a baking sheet with wax or parchment paper.
  7. Wet a hand towel.
  8. Grab a dry hand towel as well.
  9. Using a small cookie scoop, scoop and roll chocolate into a ball using the palms of your hands … working quickly as the chocolate gets messy.
  10. Wipe hands with wet towel , and then dry hands with a dry towel after rolling each ball.
  11. Place on a cookie sheet, and place in the freezer for 1 hour.
  12. Take the balls out of the freezer and set them on the counter 5 minutes before dipping them.
  13. Now place your second bag of enjoy life mini chocolate chips in a medium bowl and add your 1 tsp. of coconut oil and microwave for 30 second increments until melted. (Stirring between each time)
  14. Place melted chocolate in a tall glass or deep mug and carefully using a fork ( don’t poke with fork ) or spoon dip the balls into the coating and gently slide off back of the fork or spoon onto the parchment paper.
  15. If you want a topping, top with crushed candy canes, or sea salt while chocolate is still wet.
  16. Place in the fridge to set.
  17. Keep truffles refrigerated when storing them.

Reminder Tips For Peppermint Chocolate Truffles

When making these peppermint chocolates it can get pretty messy. Don’t forget to keep a wet and dry towel next to you and USE IT! Trust me it will not only keep things cleaner, but the balls will turn out more round.

Plan ahead for this recipe. Remember as easy as this recipe is, you do need to let the chocolate harden overnight in the fridge before forming them into balls.

  • 1 – 10 oz. bag of Enjoy Life Dairy Free Mini Semi Sweet Morsels
  • 1/2 cup coconut cream from canned coconut cream. Skim coconut cream from top of can, do not use juice. ( We used Native Forest Organic Coconut Cream  approx. 2– 5.4 oz cans )
  • 1 tsp. peppermint extract ( do not use more than 1 tsp. )

Coating

  • 1 – 10. oz bag of Enjoy Life Dairy Free Mini Semi Sweet Morsels

Notes

You can also save the leftover melted chocolate coating to use as a topping. When coating is set, take the truffles out of the fridge and drizzle the leftover chocolate on top and it it will harden up so beautifully.
