Banana Date Bread

Banana bread is a real BIG weakness of mine. Lately I have been itching to make some, so I finally caved to my craving and did. This Banana Date Bread recipe is a delicious spin on your traditional classic Banana Bread.

I added the tasty nutrient dense fruit , dates! Dates are a fabulous compliment to banana bread. Not only do they taste amazing , but they have an excellent nutritional profile. They are super rich in fiber, and very high in antioxidants. They are also an excellent natural sweetener. I have used date sugar, and pure date syrup as an alternative to sweeten my coffee, tea, oatmeal, and even at times my baked goods.

Make sure when you are getting all of your ingredients together, that your cashew milk is unsweetened. I can’t stress that enough. My favorite brand I like to use is  Silk Unsweetened Cashew Milk. I have been able to find it at Walmart, Target, and Natural Grocers. This banana date bread is gluten free and dairy free. We love how simple this recipe is to make and so will you. How To Make Banana Date Bread

Gluten Free Banana Date Bread 

  • 1 3/4 cups Namaste Foods Perfect Flour Blend
  • 1 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • pinch of salt
  • 1 cup of sugar
  • 2 eggs
  • 1/4 cup grapeseed oil
  • 1/2 tsp cinnamon
  • 2 small mashed ripe bananas
  • 1 tsp. vanilla extract
  • 1/2 cup chopped pitted dates
  • chopped pecans for topping

Icing

  • 1/2 tsp vanilla extract
  • 3 tbsp butter { room temperature } or earth balance for dairy free
  • 2 tbsp cashew milk ( silk unsweetened )
  • 2 cups powdered sugar

A delicious moist banana bread recipe that’s filled with tiny bits of dates. This banana bread recipe is gluten free and dairy free. Have a slice of this banana date bread for a quick easy breakfast, snack, or dessert.

Gluten Free Banana Date Bread 

  • 1 3/4 cups Namaste Foods Perfect Flour Blend
  • 1 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • pinch of salt
  • 1 cup of sugar
  • 2 eggs
  • 1/4 cup grapeseed oil
  • 1/2 tsp cinnamon
  • 2 small mashed ripe bananas
  • 1 tsp. vanilla extract
  • 1/2 cup chopped pitted dates
  • chopped pecans for topping

Icing

  • 1/2 tsp vanilla extract
  • 3 tbsp butter { room temperature } or earth balance for dairy free
  • 2 tbsp cashew milk ( silk unsweetened )
  • 2 cups powdered sugar

Instructions

How to make Banana Date Bread

  1. Preheat oven to 350°
  2. Line a  9×5 ( 2 1/2 inch depth ) pan with parchment paper.
  3. In a medium bowl mix your flour, baking soda, baking powder, cinnamon, and salt. ( set aside )
  4. In a large bowl using a spatula mix together sugar, vanilla, and oil.
  5. Add eggs and mix in.
  6.  Stir in mashed bananas.
  7. gently fold in dates.
  8. Gently mix dry ingredients into wet ingredients.
  9. Pour batter into your loaf pan and bake for 30 minutes, then cover and tent loaf pan with foil and continue baking another 20 to 25 minutes. Total bake time is 50 to 55 minutes. Oven temperatures may vary so check with a toothpick for doneness.
  10. Once done let completely cool on a wire rack. While cooling start your icing.
  11. In a large bowl mix your butter, cashew milk, and vanilla. Next slowly mix in in your powdered sugar. (Add more milk or less depending on thickness desired)
  12. Once loaf is cooled spread icing over the top of the loaf.
  13. Top with chopped pecans.
