Loaded with tender chunks of chicken, corn, beans, and we add a little jalapeno for a slight spicy kick. Garnish with all your favorite toppings like cilantro, avocado, tortilla strips, more the merrier. The perfect simple weeknight dinner if I must say so myself 😉
Ingredients To Make Crock Pot Chicken Tortilla Soup
- 1 pound chicken tenders or breasts
- 2 cups chicken broth
- 10 oz. can Rotel ( mild )
- 10 oz. can red enchilada sauce ( mild )
- 15 oz. can black beans – drained and rinsed
- 15 oz. can whole kernel corn
- 1 med yellow onion – chopped
- 4 cloves garlic – minced
- 1 diced jalapeno – diced
- 1 packet gluten-free taco seasoning – we like Siete
- 1 tsp. chili powder
- 1/4 tsp. paprika
- salt and pepper to taste
Toppings
- cilantro
- squeeze of lime
- avocado
- green onion
- tortilla strips or chips ( gluten-free )
- cheese – optional
- sour cream – optional

Instructions
Chicken Tortilla Soup
- In a large crockpot or ( Instant Pot Slow Cooker Setting ) add and stir together broth, enchilada sauce, packet of taco seasoning, and spices.
- Next add in the remaining ingredients.
- Stir to combine. Place the lid on your crockpot and cook on high for 4 hours.
- Once done cooking shred your chicken on a cutting board with two forks and return back to soup and mix in.
- Serve soup , add toppings and enjoy!
