Delight in every Bite! These delicious Fudgy Chocolate Muffins are a triple chocolate threat to it’s fellow chocolate cupcake counterpart. Incredibly fudgy, moist, and rich. A delicious cure to a bad day!

Some like it hot, some like it cold; I like it chocolate! These Fudgy Chocolate Muffins are the perfect breakfast or treat to mystify your senses and satisfy your chocolate desires.

Unbelievably delicious Fudgy Chocolate Muffins are loaded with tons of chocolate goodness in every bite! These muffins are super moist, tender, and rich-a-licious.

One bowl that’s all! Yep just add all your ingredients into one bowl and stir. No hand mixers required. These beauties are a perfect grab n go breakfast for those mornings you are rushing out the door.

Chocolate State Of Mind

Things to keep in mind when purchasing your ingredients :

  • I have not tested this recipe with other gluten free flour blends. Not all gluten free flour blends are created equal. Bob’s Red Mill Gluten Free 1 to 1 flour blend is probably one of the easiest flour blends to find.
  • We use unsweetened cashew milk for this recipe. My go to cashew milk is the Silk brand. Be careful the Silk brand has a unsweetened vanilla flavored cashew milk and the labeling looks very similar. This is the exact one you should buy – and again you shouldn’t have a problem finding it.

You Will Need

  • 2 cups Bob’s Red Mill Gluten Free 1 to 1 Flour
  • 1/2 cup dark cocoa powder
  • 3 tsp. baking powder
  • 1 1/4 cup sugar
  • 1 tsp. vanilla extract
  • 1/2 cup grapeseed oil
  • 2 eggs
  • 1 cup melted chocolate chips ( for dairy free use Enjoy Life brand )
  • 1 1/2 cups cashew milk unsweetened
  • 1/2 cup chocolate chips
  • ( for dairy free use Enjoy Life brand )

Description

These delicious Fudgy Chocolate Muffins are super duper moist, tender, and fudgy. Rich goodness in every bite!


Ingredients

Scale
  • 2 cups Bob’s Red Mill Gluten Free 1 to 1 Flour
  • 1/2 cup dark cocoa powder
  • 3 tsp. baking powder
  • 1 1/4 cup sugar
  • 1 tsp. vanilla extract
  • 1/2 cup grapeseed oil
  • 2 eggs
  • 1 cup melted chocolate chips ( for dairy free use Enjoy Life brand )
  • 1 1/2 cups cashew milk unsweetened
  • 1/2 cup chocolate chips ( for dairy free use Enjoy Life brand )

Instructions

  1. Preheat oven to 350 degrees
  2. Line muffin tin with liners.
  3. In a large bowl add flour, cocoa powder, baking powder, sugar, and mix.
  4. Make a well in the center of the flour and add vanilla extract, grapeseed oil, eggs, milk, and stir.
  5. Next add in your 1 cup melted chocolate chips and stir again.
  6. Fold in 1/2 cup chocolate chips.
  7. Using a large cookie scoop, scoop batter into muffin liners.
  8. Sprinkle a few chocolate chips or chocolate chunks on the tops.
  9. Bake 18 minutes ( oven temperatures may vary – keep an eye out ).
  10. Let cool completely before seving.
  11. Enjoy!
