Sugar Cookie Bars for the win!! I have been brainstorming for awhile of a fun easy dessert to make for the 4th of July. My daughter has been begging me for the last couple of weeks to buy her favorite soft Lofthouse Style Frosted Sugar Cookies. It dawned on me that I could totally make them myself but with a fun twist. So out of the oven came these delicious gluten free sugar cookie bars. She has been talking about these sugar cookie bars non stop, bragging to everyone how much they taste like her favorite cookies *but better. Needless to say it warmed my heart 🙂
This Sugar Cookie Bars recipe is super soft, tender and yummy! An incredibly easy to make recipe and even more delicious than a regular sugar cookie ( not kidding ). Absolutely no scrimping here 🙂 These beauties are simply frosted and sprinkled with fun!
Ingredients For Sugar Cookie Bars
- 3 cups Bobs Red Mill Gluten Free 1 to 1 Flour
- 1 1/4 cup sugar
- 1/2 tsp. salt
- 1 1/2 tsp. baking powder
- 1/8 tsp. baking soda
- 1 1/2 stick Earth Balance Butter= ( 3/4 cup ) partially softened
- 1 cage free egg
- 1/2 tsp. apple cider vinegar
- 1 tsp. almond extract
- 1 tsp. vanilla extract
- 1/4 cup sprinkles
Frosting:
- 2 cups powdered sugar
- 6 tbsp softened butter ( Earth Balance )
- 1 tsp vanilla

- Yield: 16 - 20 bars 1x

These gluten free sugar cookie bars are so simple and sweet! An Incredibly delicious soft chewy tender cookie bar topped with a smooth thin layer of frosting. The perfect dessert for a birthday party, holiday, or baby shower.
Ingredients
- 3 cups Bobs Red Mill Gluten Free 1 to 1 Flour
- 1 1/4 cup sugar
- 1/2 tsp. salt
- 1 1/2 tsp. baking powder
- 1/8 tsp. baking soda
- 1 1/2 stick Earth Balance Butter= ( 3/4 cup ) partially softened
- 1 cage free egg
- 1/2 tsp. apple cider vinegar
- 1 tsp. almond extract
- 1 tsp. vanilla extract
- 1/4 cup sprinkles
Frosting:
- 2 cups powdered sugar
- 6 tbsp softened butter ( Earth Balance )
- 1 tsp vanilla
Instructions
- Preheat oven to 350 degrees.
- Line a 9×13 inch baking pan with parchment paper and set aside.
- In a large bowl add flour, salt, baking powder, and baking soda. Mix together then set aside.
- In a small bowl add your cold butter. Microwave for 20 seconds. It needs to be partially softened but not completely melted.
- Transfer your slightly softened butter to a large glass bowl.
- Add your sugar and cream togetehr.
- Next add in your vanilla extract, almond extract, apple cider vinegar, and egg. Mix until fully combined.
- Now slowly add your flour into your wet ingredients and mix well.
- Now fold in your sprinkles.
- Press dough into your baking pan.
- Bake for approximately 8 to 10 minutes.
- Remove from the oven.
- Let cool.
Frosting:
- Blend butter and vanilla together until smooth.
- Slowly add powdered sugar and blend until smooth and creamy.
- Frost bars and top with sprinkles.
- Prep Time: 15 approx.
- Cook Time: 10 approx.
