Grain Free Peanut Butter Chocolate Chunk Cookies

I was so excited when Otto’s Naturals sent me a bag of their Cassava Flour. I have been wanting to bake with Cassava Flour for awhile now. This was my first time ever baking with it and I have to say it truly is a winner in my book. These Peanut Butter Chocolate Chunk cookies turned out so moist, chewy, and soft. No grittiness or weird textures.

Cassava Flour is a grain free flour that comes from the Yuca root vegetable. Cassava is not only grain free and gluten free, but its nut free, vegan, vegetarian, and paleo as well. It makes it a great choice for those on selective diets. One thing to keep in mind is that although it’s grain free, it does not mean it’s low carb. It actually contains a pretty high carbohydrate profile, given the fact that it comes from a starchy tuber.

Otto’s Cassava flour can be used as a one to one substitute by weight for wheat flour in many recipes because of its mild flavor and light texture. You can expect it to have no additives, xantham gum, or fillers, how exciting is that?!

Ingredients you will need for this recipe

  • Otto’s Cassava Flour
  • Baking Soda
  • Sea Salt
  • Vanilla Extract
  • 1 Egg ( room temp )
  • 1 Yolk ( room temp )
  • Creamy Peanut Butter
  • Earth Balance Butter ( softened )
  • Brown Sugar
  • Sugar
  • Enjoy Life ( brand ) Chocolate Chunks

Pineapple Raspberry Sorbet

Pineapple Raspberry Sorbet

 

Summertime and the livings easy! And isn’t that what we all love so much about summer? Last summer we went to Maui for a family vacation. It was like pineapple central. I have never had so many pineapple treats in one whole week! From pineapple’s all over my acai bowls, pineapple whip, pina colada’s, pineapple ice cream, to even drinking fresh pineapple juice out of an actual pineapple. I mean it’s pretty safe to say I was in pineapple heaven, and this girl has no complaints!

 

 

As I was reminiscing this week about our trip last July,  I started to get some serious major pineapple cravings. It’s been warming up here in North Idaho so I thought a pineapple sorbet sounded pretty darn amazing. This tropical frozen treat has a fun little twist… raspberries. That was non negotiable because pineapple and raspberries are my two most favorite fruits. It would be a sin if I left them out.

 

My Pineapple Raspberry Sorbet recipe can be made in a jiff, and it only requires 4 ingredients! Yes four ingredients. I knew that would make you smile 🙂 This delicious light summer treat is paleo, vegan, gluten free, dairy free, and has no refined sugars. How can it get any better than that? All you need is a food processor, frozen pineapple, frozen raspberries, better than half, and honey ( I like to buy local honey, it helps to combat allergies ). In my house, we are always in the mood for peanut butter! From our protein shakes to our toast to our fruit, to a good old fashioned pb & j sandwich. There’s no refute, it’s part of our family 😊 Peanut Butter is the driving force in making this recipe. I just couldn’t think of anything that sounded more delightful than a Chocolate Peanut Butter Cake, with of course some frosting on top to entice those taste buds even more. Sorry my cravings took over, haha!!  I mean chocolate and peanut butter are like tea and honey, you almost can’t have one without the other. The combination takes it to that next level of delish. So, if you’ve been searching for that easy to make delicious peanut butter chocolate cake, then this recipe is made for you!

This Chocolate Peanut Butter Cake is not only Gluten Free but Dairy Free as well. I used Namaste Foods Chocolate Cake Mix, making it fun and painless.  It’s incredibly moist, fudgy, and did I mention insanely delicious?! As you can tell, we are hooked on Namaste Foods Mixes. Baking Powder

Vanilla

Cage Free Eggs

Grapeseed Oil

All Natural Creamy Peanut Butter –  ( The No Stir creamy peanut butter work Best in this recipe )

Cahew Milk ( Silk Unsweetened Brand ) https://silk.com/plant-based-products/cashewmilk/unsweetened-cashewmilk/ They sell this at Walmart and Natural Grocers.

Enjoy Life Semi-Sweet Chocolate Chips

1 stick Earth Balance butter or regular unsalted butter

Salt ( only for real butter frosting version )

Powdered Sugar

Better Than Half unsweetened creamer

Grain Free Peanut Butter Cheesecake Bites with Cashew Crust

I’m always in the kitchen baking, I mean I literally feel like I live in there. I usually bake with gluten free flours, but from time to time I like to mix it up and bake grain free. When I do its very important to me that I don’t sacrifice on flavor and texture. Grain Free can be a little more tricky to work with. I especially loved this Grain Free Peanut Butter Cheesecake Bites with Cashew Crust recipe, it was almost too easy to work with. I felt like a cheater haha! If you tend to lean more on the grain free side of the world then you definitely need to check out these Maple Cinnamon Almond Butter Cookies . These delicious bites are flourless, giving them an extra added bonus… Woohoo!

Cheesecake is one of my husbands favorite desserts! Anytime I say the word ” cheesecake  ” he will bend over backwards for me just to get me to make it for him! Needless to say he was drooling at the mouth over these delicious cheesecake bites. The cashew crust gives it this really nice creamy – buttery flavor. I love using cashews when I bake, they are lower in fat compared to other nuts and are rich in protein and magnesium. Another delicious recipe to try with cashews are these Dark Chocolate Dipped Cashew Cookies. 

 

Here are a few thoughts and tips :

  • Make sure when you cream your wet ingredients you stay PATIENT. It takes a few minutes for the ingredients to combine and smooth out.
  • Keep an eye on your cheesecake bites , oven temperatures vary.
  • If you go with the dairy free option, keep in mind the taste and texture are NOT real cream cheese so it may slightly differ… This is why I suggest Wayfare Cream Cheese , the flavor and texture is the closest I have found to real cream cheese. ( This is my personal opinion )

Gluten Free Chocolate Chunk Funfetti Blondies

This was a fun one to make!! Introducing … Gluten Free Chocolate Chunk Funfetti Blondies!! Have you ever had one of those aaaah haa moments where you are just taken back in excitement? Well lets just say that’s what happened the night before Fathers Day when I was twiddling my thumbs on what to make my husband for Fathers Day dessert. I opened up my pantry door and …BEHOLD… a box of Namaste Foods Blondie Mix was staring me down! That was the instant the light bulb went off in my head and the aaaah haa moment kicked in! I was like… Yes! Natalie…Thats it!! Chocolate Chunks and Sprinkles!! Who in their right mind doesn’t love that? Okay well there may be a few, BUT my husband does, and these were sure to make his special day even more special.

 

Can’t Get Enough

One bowl, and only six ingredients!! Yes you heard that right! These are the kind of recipes I love and want to bring to my blog more often. So convenient and fast but still just as amazing! If you are a fan of using baking mixes like me check out my Gluten Free Hi Hat S’mores Cupcakes they are super easy and fun to make.

One thing that’s really great about this Blondie recipe is that it’s perfect for so many occasions. No slaving in the kitchen just show up, be proud, and wow the crowds! The taste is like something out of a chocolate chip cookie lovers dream… sweet, chewy, rich, melt in your mouth goodness. Yeah, I’m not kidding! And just for the record, my husband can’t wait for me to make these again, I think he liked these better than all his Fathers Day gifts combined 🙂

Faith On Record

Walking out my faith here on my blog is not the easiest feat. In fact l’ve had to let down some serious walls and barriers that could potentially hold me back. In doing so it has opened me up to judgement and criticism. It makes people uncomfortable. However, I have also had so much love and support and it doesn’t go unnoticed. Let me tell you, I have faced my greatest opposition from people in my closest circles. As hard as it is, it doesn’t come at a surprise to me! I knew when I started this blog that this would be my reality. Jesus states in John 15:18 “ If the world hates you, remember that it hated me first. The world would love you as one of its own if you belonged to it, but you are no longer part of this world, therefore it hates you. Since they persecuted me, naturally they will persecute you”. 

 

Truth

As difficult and daunting as it can be at times, it’s also so exciting! It is what makes me thrive! It is what gives me the power to live in freedom without hindrance or restraint. I will never give up or give in. God has given us freedom and victory over those things in our lives that so easily try to entangle and bound us up in heaviness. One of my go to scriptures on freedom is found in 2 Corinthians 3:17 –

“ Now The Lord is the Spirit and where the Spirit of the Lord is there is freedom “.

Knowing that God sent his son Jesus Christ to purchase our freedom with his blood and forgive our sins is what motivates me to be free to do what God has designed me to do. We are no longer slaves to the past, present, future, anyone, or anything. We are free!!! So as Luke 10:3 says,  “ Now GO, and remember I am sending you out as lambs among wolves “. 

But also remember – 

1 John 4:4 “ Greater is he that is in me, than he that is in the world “. 

I have been through so much with my health. It’s part of what inspires me to do what I do… I won’t hold back what God has done in and through me, and neither should you!! I want to encourage you to live free… step out boldly and confidently.

Growing up I had a couple favorite ice creams. Neapolitan was on that list. These Neapolitan Mini Bundt Cakes are a blast from my past! I had so much fun developing the recipe. It took me 4 weeks, yes 4 weeks!! But, they are perfected and delicious and would make such a fun birthday treat or any occasion for that matter. Not to mention I made them with a new gluten free flour I tested out by Namaste Foods. I was so impressed with the flavor and how fine the texture is. I also love that the flour is free of the top 8 allergens. So for those of you that are really limited, I have your back 🙂 … I know your going to love it! I have given you two options for your topping, a chocolate ganache or a strawberry icing. Hey why not do both?! Sprinkle  some love on top and you will be enjoying a trip back down memory lane.
