Lemon Vanilla Chia Pudding

The sunshine is out and this sugar free Lemon Vanilla Chia Pudding has all the yummy zesty freshness going on! Full of creamy smooth lemon tart flavor with a hint of vanilla, the perfect lemonilla pair. It’s like lemon pie with a healthy spin off. This Lemon Chia Pudding is a delicious way to start or end your day!

Chia Seed Superfood Health Benefits

Chia seeds were something I didn’t explore until 10 years ago. They looked too creepy to eat. I thought because they looked gross they would taste gross. Boy was I wrong! Chia seeds taste SO good, and even better have a plethora of health benefits. I’ll just scratch the surface for you.

Chia seeds are jam packed with omega-3 fatty acids, fiber, antioxidants, and protein. This makes them a fun quick healthy addition to add to your morning protein shakes, oatmeal, baked goods, and my Lemon Chia Pudding 😉

Ingredients To Make Lemon Chia Pudding

Vanilla Chia Pudding

  • 2 tbsp. chia seeds
  • 3/4 cup unsweet coconut milk
  • 1 1/2 tbsp. lakanto monkfruit white sugar replacement
  • 1 tsp. vanilla extract ( not imitation )

Lemon Pudding

  • 1/2 cup canned coconut cream ( cream part only )
  • 1/2 cup unsweet coconut milk
  • 1/3 cup Lakanto Monkfruit white sugar replacement
  • 4 egg yolks
  • 1 tbsp. cornstarch
  • 1 tbsp. lemon zest
  • 1/4 cup fresh squeezed lemon juice
  • 1 tbsp. coconut oil

How To Make Lemon Chia Pudding

  1. Heat up a heat proof bowl over a pot of simmering water or you can use a double boiler.
  2. In a medium bowl stir together chia seeds, coconut milk, vanilla extract, and monkfruit. Cover and refrigerate 3 hours.
  3. Using a small bowl whisk egg yolks and set aside.
  4. Add monkfruit and cornstarch to heat proof bowl and mix.
  5. Next mix in lemon juice, coconut milk, coconut cream, and lemon zest. Stir until thoroughly mixed in.
  6. Whisk in egg yolks and continue to stir until thickened. This takes approximately 12 to 15 minutes.
  7. Once thickened remove from heat and stir in coconut oil.
  8. Let cool for 15 minutes. ( strain if desired )
  9. Cover and place in the refrigerator for 2 to 3 hours.
  10. Layer chia and lemon pudding and serve in a parfait glass or yogurt jars.
  11. Top with more lemon zest if desired.
