Ingredients To Make Sugar Free Strawberry Mousse

Strawberry Puree

  • 13 ounces fresh strawberries rinsed
  • 3 tbsp Lakanto Powdered Monkfruit Sweetener or Swerve Confectioners Sweetener

Strawberry Mousse

  • 2 cups heavy whipping cream
  • 1/2 cup Lakanto Powdered Monkfruit Sweetener or Swerve Confectioners Sweetener
  • 1 tsp. vanilla extract
  • 1 tsp. strawberry extract
  • 1/2 cup strawberry puree

 

Dairy-Free Version

Strawberry Puree

  • 13 ounces fresh strawberries rinsed
  • 3 tbsp Lakanto Powdered Monkfruit Sweetener or Swerve Confectioners Sweetener

Strawberry Mousse

  • 1 – 13oz. can coconut cream ( cream only discard liquid ) room temp. = approx 1 cup of cream
  • 1/2 cup dairy-free cream cheese
  • 1/2 cup strawberry puree
  • 1/4 cup + 1 tbsp powdered sweetener ( add more to taste if desired )
  • 1/2 tsp. vanilla extract
  • 1 tsp. strawberry extract

How To Make Sugar Free Strawberry Mousse

Strawberry Puree

  1. Add fresh strawberries to food processor and blend until completely pureed and no visible chunks .
  2. Next add in your powdered sweetener and blend again ( reserve a 1/2 cup and set aside ).

Strawberry Mousse

  1. In a large bowl add whipping cream, vanilla extract, and strawberry extract. Whip until soft peaks form ( approx. 3-5 minutes ).
  2. Add in powdered sweetener and 1/2 cup of the strawberry puree,  blend until just combined.
  3. Divide remaining strawberry puree into the bottom of your dessert cups then spoon the mousse on top.
  4. Refrigerate at least 3 hours before serving.

 

Dairy-Free Version

Strawberry Puree

  2. Add in 1/2 cup of reserved strawberry puree and powdered sweetener ( add more sweetener to taste if desired ) and blend again until smooth and thoroughly combined.
  3. Divide remaining strawberry puree into the bottom of your dessert cups then spoon the mousse on top.
  4. Refrigerate at least 4 hours before serving.
