Ingredients To Make Sugar Free Strawberry Mousse
Strawberry Puree
- 13 ounces fresh strawberries rinsed
- 3 tbsp Lakanto Powdered Monkfruit Sweetener or Swerve Confectioners Sweetener
Strawberry Mousse
- 2 cups heavy whipping cream
- 1/2 cup Lakanto Powdered Monkfruit Sweetener or Swerve Confectioners Sweetener
- 1 tsp. vanilla extract
- 1 tsp. strawberry extract
- 1/2 cup strawberry puree
Dairy-Free Version
Strawberry Puree
- 13 ounces fresh strawberries rinsed
- 3 tbsp Lakanto Powdered Monkfruit Sweetener or Swerve Confectioners Sweetener
Strawberry Mousse
- 1 – 13oz. can coconut cream ( cream only discard liquid ) room temp. = approx 1 cup of cream
- 1/2 cup dairy-free cream cheese
- 1/2 cup strawberry puree
- 1/4 cup + 1 tbsp powdered sweetener ( add more to taste if desired )
- 1/2 tsp. vanilla extract
- 1 tsp. strawberry extract
How To Make Sugar Free Strawberry Mousse
Strawberry Puree
- Add fresh strawberries to food processor and blend until completely pureed and no visible chunks .
- Next add in your powdered sweetener and blend again ( reserve a 1/2 cup and set aside ).
Strawberry Mousse
- In a large bowl add whipping cream, vanilla extract, and strawberry extract. Whip until soft peaks form ( approx. 3-5 minutes ).
- Add in powdered sweetener and 1/2 cup of the strawberry puree, blend until just combined.
- Divide remaining strawberry puree into the bottom of your dessert cups then spoon the mousse on top.
- Refrigerate at least 3 hours before serving.
Dairy-Free Version
Strawberry Puree
- Add fresh strawberries to food processor and blend until completely pureed and no visible chunks .
- Next add in your powdered sweetener and blend again ( reserve a 1/2 cup and set aside ).
Strawberry Mousse
- Add canned coconut cream ( skim cream off top of can and discard the liquid ) , cream cheese, vanilla, and strawberry extract to food processor and blend for 1 minute.
- Add in 1/2 cup of reserved strawberry puree and powdered sweetener ( add more sweetener to taste if desired ) and blend again until smooth and thoroughly combined.
- Divide remaining strawberry puree into the bottom of your dessert cups then spoon the mousse on top.
- Refrigerate at least 4 hours before serving.
