I love Sundays! Sundays are the one day my husband gets off early, and usually the one day a week we get to eat dinner together as a family, unless it’s his day off. Tonight wasn’t just about the dinner. I had cookies on my mind. So the cookie monster in me got to work!
Figs… If you haven’t tried them, you need to! There like a little sweet, chewy, delicious treasure. Especially in cookies ? They’re also packed with fiber and nutrients making them even more enticing! Which leads me to bring you my Toasted Coconut Pecan Fig cookies. These were so soft, moist and chewy. Definitely the pinnacle of perfection! Yes yes yes! I’m so excited for you to try these! Your kids will love them too!! Stopping at one is just not an option! Let me know what you think?

Ingredients List:

 

  • 1 3/4 cupBobs Red Mill Gluten Free 1 to 1 Flour
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 3/4 cup brown sugar ( Packed )
  • 1/4 cup natural honey
  • 2 tbsp pecan chips
  • 1/2 cup vegan butter Softened
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cups flaked shredded coconut
  • 1 cup dried figs ( Diced )
Topping’s
  • 24 Pecan Pieces

How To Make :

Preheat oven to 375 First combine your flour, baking powder, and salt in a medium bowl, sift together. In a large bowl, add in your brown sugar, honey, and butter, mix until creamed. Blend in your egg, and vanilla. Once blended add in your figs, stir together. Now add in your dry ingredients and mix everything together thoroughly. Next form 1 inch balls and drop and roll them into your flaked coconut. Place the Cookie on your greased baking sheet and top with a pecan piece. Place in yo

    Your cookies look so delicious! I would really love to try them. But as I was reading the recipe the figs were left out. Please tell me what the measurement is. Thank you so much!
