Grain Free Peanut Butter Chocolate Chunk Cookies

I was so excited when Otto’s Naturals sent me a bag of their Cassava Flour. I have been wanting to bake with Cassava Flour for awhile now. This was my first time ever baking with it and I have to say it truly is a winner in my book. These Peanut Butter Chocolate Chunk cookies turned out so moist, chewy, and soft. No grittiness or weird textures.

Cassava Flour is a grain free flour that comes from the Yuca root vegetable. Cassava is not only grain free and gluten free, but its nut free, vegan, vegetarian, and paleo as well. It makes it a great choice for those on selective diets. One thing to keep in mind is that although it’s grain free, it does not mean it’s low carb. It actually contains a pretty high carbohydrate profile, given the fact that it comes from a starchy tuber.

Otto’s Cassava flour can be used as a one to one substitute by weight for wheat flour in many recipes because of its mild flavor and light texture. You can expect it to have no additives, xantham gum, or fillers, how exciting is that?!

Ingredients you will need for this recipe

  • Otto’s Cassava Flour
  • Baking Soda
  • Sea Salt
  • Vanilla Extract
  • 1 Egg ( room temp )
  • 1 Yolk ( room temp )
  • Creamy Peanut Butter
  • Earth Balance Butter ( softened )
  • Brown Sugar
  • Sugar
  • Enjoy Life ( brand ) Chocolate Chunks

Pineapple Raspberry Sorbet

Pineapple Raspberry Sorbet

 

Summertime and the livings easy! And isn’t that what we all love so much about summer? Last summer we went to Maui for a family vacation. It was like pineapple central. I have never had so many pineapple treats in one whole week! From pineapple’s all over my acai bowls, pineapple whip, pina colada’s, pineapple ice cream, to even drinking fresh pineapple juice out of an actual pineapple. I mean it’s pretty safe to say I was in pineapple heaven, and this girl has no complaints!

 

 

As I was reminiscing this week about our trip last July,  I started to get some serious major pineapple cravings. It’s been warming up here in North Idaho so I thought a pineapple sorbet sounded pretty darn amazing. This tropical frozen treat has a fun little twist… raspberries. That was non negotiable because pineapple and raspberries are my two most favorite fruits. It would be a sin if I left them out.

 

My Pineapple Raspberry Sorbet recipe can be made in a jiff, and it only requires 4 ingredients! Yes four ingredients. I knew that would make you smile 🙂 This delicious light summer treat is paleo, vegan, gluten free, dairy free, and has no refined sugars. How can it get any better than that? All you need is a food processor, frozen pineapple, frozen raspberries, better than half, and honey ( I like to buy local honey, it helps to combat allergies ). In my house, we are always in the mood for peanut butter! From our protein shakes to our toast to our fruit, to a good old fashioned pb & j sandwich. There’s no refute, it’s part of our family 😊 Peanut Butter is the driving force in making this recipe. I just couldn’t think of anything that sounded more delightful than a Chocolate Peanut Butter Cake, with of course some frosting on top to entice those taste buds even more. Sorry my cravings took over, haha!!  I mean chocolate and peanut butter are like tea and honey, you almost can’t have one without the other. The combination takes it to that next level of delish. So, if you’ve been searching for that easy to make delicious peanut butter chocolate cake, then this recipe is made for you!

I used Namaste Foods Chocolate Cake Mix, making it fun and painless.  It’s incredibly moist, fudgy, and did I mention insanely delicious?! As you can tell, we are hooked on Namaste Foods Mixes. Baking Powder

Vanilla

Cage Free Eggs

Grapeseed Oil

All Natural Creamy Peanut Butter –  ( The No Stir creamy peanut butter work Best in this recipe )

Cahew Milk ( Silk Unsweetened Brand ) https://silk.com/plant-based-products/cashewmilk/unsweetened-cashewmilk/ They sell this at Walmart and Natural Grocers.

Enjoy Life Semi-Sweet Chocolate Chips

1 stick Earth Balance butter or regular unsalted butter

Salt ( only for real butter frosting version )

Powdered Sugar

Better Than Half unsweetened creamer

I am the true vine, and my father is the gardener. He cuts off every branch in me that bears no fruit, while every branch that does bear fruit he prunes so that it will be even more fruitful. (5) I am the vine; You are the branches. If a man remains in me and I in him, he will bear much fruit; apart from me you can do nothing. (11) I have told you this so that my joy may be in you and that your joy may be complete.

God has me in this pruning season and I have to admit, it hasn’t been the most pleasant experience. I am extremely stubborn, so it’s been a flailing of the arms, stomp your feet, throw yourself on the floor all out Little Miss Natalie temper tantrum of the undertaking.

Are you following me? 🙈 I won’t lie, it’s been some painful gain. However, the exchange rate has been huge!! The situations, setbacks, and hurdles that once depleted me emotionally, mentally, and even sometimes physically, are being severed at the cord one by one. Hebrews 12:11 ~ No discipline seems pleasant at the time, but painful. Later on, however, it produces a harvest of righteousness and peace for those who have been trained by it.

Although I don’t always understand this process, it is absolutely necessary in order to prosper, grow, and be fruitful in every area of my life. The profits yielded ?! …. Joy, Peace, contentment, fulfillment, and so so much more. He made us full of potential on purpose to produce good fruit that brings glory to his name. Outside of that we are nothing! Weak, empty, and fruitless … separated from Christ. So let’s abide and delight in him, letting him prune and lead us into higher capacities.

Now faith is confidence in what we hope for and assurance about what we do not see.

 

I’ve always been a firm believer of God being in complete 100%  control over my life. I believe it yes, but do I always live out that truth…no! Over this past month I’ve felt my passions run dry, with this little tug at my heart to take a step back and evaluate areas in my life in which I need to give up control and release them back to God. An area that stood out like a sore thumb was one of my social media accounts that requires an extreme amount of engaging to get your posts seen by your followers. This was an area I would normally not put much thought to because I need it to reach the masses and promote my blog. To be quite honest, I didn’t really want to address this. The constant engaging can be like an adrenaline rush, and I didn’t want to have to give that up. However, I now see that this little fun hobby that I started hasn’t really been that much fun at all. I’ve been exhausting myself, spending way too much time and energy playing catch up on posts and other engagement. I’ve found myself to be less productive with my days, and its taking away valuable time from the things that are important to me. Maybe you can relate in a similar fashion? God showed me that my assurance and trust needs to be in him, not in myself or in any other form or function!! He’s saying ” Natalie, I am God , the Alpha and the Omega, the First and the Last… Who’s doing this? You or me? Algorithim or no algorithm … there is no limits to what I can do! Don’t put me in a box, have a bigger view. Step out in faith, let me fill you and sustain you. Stop tying me down, yield to me and watch me do exceedingly abundantly beyond all that you can even dare to ask, think or imagine ~ Ephesians 3:20 ” There is no place God can’t work. He is everywhere and he is working all things out for your good. I will never give up on the calling God has spoken over my life no matter how long this journey takes, but I will find balance. If that means slowing down, and getting less engagement on my posts, then at least I will be living out my calling with passion knowing I don’t have to fear. God will get me to my destination, no matter the obstacles I face to get there.

Nothing that happens in our life is wasted. God works all things together for good. He uses those setbacks, frustrations, and difficulties to glorify His name and display His work in our lives.  I never really understood what good God could bring forth from all the health struggles I endured over the years. Looking back the evidence is so clear. He was refining, perfecting, and preparing me to go all the way with him. This purifying process was equipping me for greater things to come… skimming off all impurities and building in me mighty muscles of faith! We’ve been called according to his purpose and we have a destiny to fulfill. No matter what life throws our way, we can take confidence and assurance in the fact that God has a master plan and he will use it for the good… It’s without question! God is all powerful, will you trust him enough to hand the reigns over to him?
