I’m not much of a drinker, but when I do have a drink… it’s usually something girly fufu and sweet! One of my favorite drinks is a flavored moscow mule. I’m usually all about the huckleberry. This time though I was craving watermelon. I live in North Idaho and although the summers are absolutely heavenly and gorgeous, they are extremely short! So we try to absorb every ounce of the summer vibes we can. That doesn’t just go for outdoor activities, it goes for the summertime food and drinks as well. Watermelon is another one of those fruits that just makes summer feel even more like summer. This super refreshing Watermelon Moscow Mule is low in sugar ( sugar coming naturally from the watermelon … basically sugar free ) , no refined sugars, and is low in carbs.

 

 

Healthy Low Carb Moscow Mule

I recently stumbled across this Zevia brand Ginger Beer and we absolutely love it! It’s naturally flavored, and has zero calories. To top it off, it has no sugar, no artificial sweeteners and is Non GMO.

If your looking for a really delicious Gluten Free Vodka that’s reasonably priced, then I suggest this Tito’s Handmade Vodka. This brand has no sugar or gelatin added.

( Keep in mind if you are sensitive to corn,  it is distilled from corn. )

Ingredients you will need

  • Fresh seedless watermelon
  • Monkfruit sweetener
  • Vodka
  • Fresh lime juice
  • Fresh finely grated ginger
  • “Zevia” brand Ginger Beer

Pineapple Raspberry Sorbet

Pineapple Raspberry Sorbet

 

Summertime and the livings easy! And isn’t that what we all love so much about summer? Last summer we went to Maui for a family vacation. It was like pineapple central. I have never had so many pineapple treats in one whole week! From pineapple’s all over my acai bowls, pineapple whip, pina colada’s, pineapple ice cream, to even drinking fresh pineapple juice out of an actual pineapple. I mean it’s pretty safe to say I was in pineapple heaven, and this girl has no complaints!

 

 

As I was reminiscing this week about our trip last July,  I started to get some serious major pineapple cravings. It’s been warming up here in North Idaho so I thought a pineapple sorbet sounded pretty darn amazing. This tropical frozen treat has a fun little twist… raspberries. That was non negotiable because pineapple and raspberries are my two most favorite fruits. It would be a sin if I left them out.

 

My Pineapple Raspberry Sorbet recipe can be made in a jiff, and it only requires 4 ingredients! Yes four ingredients. I knew that would make you smile 🙂 This delicious light summer treat is paleo, vegan, gluten free, dairy free, and has no refined sugars. How can it get any better than that? All you need is a food processor, frozen pineapple, frozen raspberries, better than half, and honey ( I like to buy local honey, it helps to combat allergies ). Grain Free Peanut Butter Cheesecake Bites with Cashew Crust

I’m always in the kitchen baking, I mean I literally feel like I live in there. I usually bake with gluten free flours, but from time to time I like to mix it up and bake grain free. When I do its very important to me that I don’t sacrifice on flavor and texture. Grain Free can be a little more tricky to work with. I especially loved this Grain Free Peanut Butter Cheesecake Bites with Cashew Crust recipe, it was almost too easy to work with. I felt like a cheater haha! If you tend to lean more on the grain free side of the world then you definitely need to check out these Maple Cinnamon Almond Butter Cookies . These delicious bites are flourless, giving them an extra added bonus… Woohoo!

Cheesecake is one of my husbands favorite desserts! Anytime I say the word ” cheesecake  ” he will bend over backwards for me just to get me to make it for him! Needless to say he was drooling at the mouth over these delicious cheesecake bites. The cashew crust gives it this really nice creamy – buttery flavor. I love using cashews when I bake, they are lower in fat compared to other nuts and are rich in protein and magnesium. Another delicious recipe to try with cashews are these Dark Chocolate Dipped Cashew Cookies. 

 

Here are a few thoughts and tips :

  • Make sure when you cream your wet ingredients you stay PATIENT. It takes a few minutes for the ingredients to combine and smooth out.
  • Keep an eye on your cheesecake bites , oven temperatures vary.
  • If you go with the dairy free option, keep in mind the taste and texture are NOT real cream cheese so it may slightly differ… This is why I suggest Wayfare Cream Cheese , the flavor and texture is the closest I have found to real cream cheese. ( This is my personal opinion )

This was a fun one to make!! Introducing … Gluten Free Chocolate Chunk Funfetti Blondies!! Have you ever had one of those aaaah haa moments where you are just taken back in excitement? Well lets just say that’s what happened the night before Fathers Day when I was twiddling my thumbs on what to make my husband for Fathers Day dessert. I opened up my pantry door and …BEHOLD… a box of Namaste Foods Blondie Mix was staring me down! That was the instant the light bulb went off in my head and the aaaah haa moment kicked in! I was like… Yes! Natalie…Thats it!! Chocolate Chunks and Sprinkles!! Who in their right mind doesn’t love that? Okay well there may be a few, BUT my husband does, and these were sure to make his special day even more special.

 

Can’t Get Enough

One bowl, and only six ingredients!! Yes you heard that right! These are the kind of recipes I love and want to bring to my blog more often. So convenient and fast but still just as amazing! If you are a fan of using baking mixes like me check out my Gluten Free Hi Hat S’mores Cupcakes they are super easy and fun to make.

One thing that’s really great about this Blondie recipe is that it’s perfect for so many occasions. No slaving in the kitchen just show up, be proud, and wow the crowds! The taste is like something out of a chocolate chip cookie lovers dream… sweet, chewy, rich, melt in your mouth goodness. Yeah, I’m not kidding! And just for the record, my husband can’t wait for me to make these again, I think he liked these better than all his Fathers Day gifts combined 🙂

Now faith is confidence in what we hope for and assurance about what we do not see.

 

I’ve always been a firm believer of God being in complete 100%  control over my life. I believe it yes, but do I always live out that truth…no! Over this past month I’ve felt my passions run dry, with this little tug at my heart to take a step back and evaluate areas in my life in which I need to give up control and release them back to God. An area that stood out like a sore thumb was one of my social media accounts that requires an extreme amount of engaging to get your posts seen by your followers. This was an area I would normally not put much thought to because I need it to reach the masses and promote my blog. To be quite honest, I didn’t really want to address this. The constant engaging can be like an adrenaline rush, and I didn’t want to have to give that up. However, I now see that this little fun hobby that I started hasn’t really been that much fun at all. I’ve been exhausting myself, spending way too much time and energy playing catch up on posts and other engagement. I’ve found myself to be less productive with my days, and its taking away valuable time from the things that are important to me. Maybe you can relate in a similar fashion? God showed me that my assurance and trust needs to be in him, not in myself or in any other form or function!! He’s saying ” Natalie, I am God , the Alpha and the Omega, the First and the Last… Who’s doing this? You or me? Algorithim or no algorithm … there is no limits to what I can do! Don’t put me in a box, have a bigger view. Step out in faith, let me fill you and sustain you. Stop tying me down, yield to me and watch me do exceedingly abundantly beyond all that you can even dare to ask, think or imagine ~ Ephesians 3:20 ” There is no place God can’t work. He is everywhere and he is working all things out for your good. I will never give up on the calling God has spoken over my life no matter how long this journey takes, but I will find balance. If that means slowing down, and getting less engagement on my posts, then at least I will be living out my calling with passion knowing I don’t have to fear. God will get me to my destination, no matter the obstacles I face to get there.

Let the peace of Christ rule in your hearts, since as members of one body you were called to peace.

Peace is the moderator of my heart and mind. Recently, I’ve been calling the shots in my life instead of letting the Lord be my regulator. I’m tired of trying to control things that only God can control. I just end up with a lack of peace, exhausted and overwhelmed. Can you relate? You think I would’ve learned this lesson by now, but nope it still ends up resurfacing in different shapes and forms. You know what?… Sometimes I do it perfectly. I submit to his will and guidance, and my direction is so clear. Then there’s times like recently when I’m wandering blindly out in the wilderness. The more I revisit this process the more spiritual growth and renewal I experience. I truly believe affliction is the pathway to peace. Think about it, why would I want to sit around solving my own problems being depressed as the storms of life rage around me? Why not trust God, surrender to his will, stand firm in faith and watch God solve my problems while I enjoy my life!! I truly believe that is the secret to victorious living!

Don’t let true contentment evade you any longer, Let’s put our trust in God and seek divine perspective!
